Always a good, quick minestroni. I add a small handful of parsley (subtle), sometimes chicken broth base, instead of vegetable, and occasionally a large turnip instead of potatoes. Also, 1/2 to one cup of rice macaroni or other favorite pasta. Spinach too instead of kale.

Made a meatless, veggie chili by adapting this recipe by substituting protein crumbles instead of beef and sausage. Turned out very nice tasty. Kept all the other ingredients the same.

Truly easy to fix. We like the recipe as is, but the other suggestions and variations look equally wonderful to try. Easy and quick preparation. I'll report back later as to taste. Oh, we used orzo instead of macaroni. Also, broccoli slaw instead of cabbage. Doubled the recipe and it worked just fine. Also substituted condensed chicken base instead of prepared stock. Really delicious!

Have tried this recipe twice. It's great, Just like the reviews state. The first time I stuck to the recipe, the second time I added an Italian herb mix. Still good. It's one of those recipes you can easily experiment with. The second variation also included a mix of white and sweet potatoes. Enjoy.

Simple, prepared in about 30 minutes or so. Adjusted the spices and herbs to taste, but only added cayenne instead of jalapenos, plus 1-2 Tbl of fennel seeds, 1Tbl paprika, vegetable broth instead of beef. Also used 1 each, 15 oz cans of white kidney and pinto beans. Good stuff!
