Original recipe (1X) yields 6 servings 1 tablespoon olive oil 1 onion, chopped 2 (14 ounce) cans quartered artichoke hearts, drained and roughly chopped 2 cloves garlic, minced 1 teaspoon dried thyme 4 cups chicken broth 1/2 cup freshly grated Parmesan cheese 1 tablespoon lemon juice 1/2 cup heavy cream salt and freshly ground black pepper to taste Directions Heat olive oil over medium heat in a large pot. Add onion and cook and stir until softened, about 5 minutes. Add artichoke hearts, garlic, and thyme, and cook for another 2 to 3 minutes. Pour in chicken broth and bring to a simmer. Cook, uncovered, for about 10 minutes. Stir in Parmesan cheese and lemon juice. Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches, then return it to the pot.
