  • 1/2 pound ground beef (80/20)
  • 1/2 small onion, chopped
  • 1 clove garlic, minced
  • 1 (8-3/4-ounce) whole kernel corn, drained
  • 2/3 cup cream of mushroom soup, undiluted
  • 1/2 cup shredded Cheddar cheese, divided
  • 1/3 cup milk
  • 2 tablespoons sour cream
  • 1/4 teaspoon black pepper
  • 2 cups frozen tater tots

Instructions

  1. Heat oven to 375 degrees F. Lightly grease an 8 x 8-inch baking dish.

  2. In a skillet, cook onion until tender. Add garlic and cook 1 minute. Add the ground beef and cook until no pink remains. Stir in the corn, soup, ¼ cup cheese, milk, sour cream, and pepper.

  3. Place 1 cup Tater Tots into the baking dish. Add the beef mixture over the Tater Tots. Add the other 1 cup Tater Tots over the beef and then sprinkle the remaining cheese over the Tater Tots.

  4. Bake 20 to 25 minutes until golden and cheese has melted.

I love finding casserole recipes for two people. I usually only cook for one, so it takes me almost a week to finish a whole casserole. These smaller-serving casseroles are just perfect.
