{ Lunch: Fried Rice with Cauliflower and Squid }


My lunch on Friday ...

I bought a squid with roe on Thursday and marinated it for over night.  I had some leftover small shrimps that I have to clear for the week and also some cauliflower from my daughter's lunchbox.  All these assembled and became my lunch.

{ Lunch: Origini }



I had some leftover rice, so I made origini for lunch.

I took an egg and made egg roll with sakura ebi and miso soup.  I stole some enoki mushroom and clams which I will be cooking for dinner tonight for the miso soup. :P

I also had a small heap of shredded cabbage, cucumber, crab stick and cherry tomatoes and edamame beans to go with the meal. I made a miso dressing (cos I'm sharing ingredients) to go with the salad.

And all I wanted was to just clear the leftover rice.

{ Breakfast: Grilled Portobello Mushroom Burger }



I'm clearing mushrooms that I bought earlier this week that I ended up not cooking.  I had a tray of medium sized portobello mushrooms so I thought I will just grill them for breakfast today.

The kids want theirs with ham and cheese; without bread. :/  I haven't been well and lost my appetite. So I'm going to force myself to have a heavier breakfast.  I had cravings for caramelised onions, so adding that to my mushrooms should help whet my appetite.



I oven grilled the portobello mushroom for 10mins at 240c, with butter, garlic powder and and a splash of balsamic vinegar, basting the mushroom with the sauce from it.

The burger bun was halved and toasted. I had the burger with lettuce, tomatoes, cheese, the juicy portobello mushroom; topped with yummy caramelised onions.

{ Breakfast : Grilled Portobello Mushroom with Ham, Bacon and Poached Egg }


This was last Saturday's breakfast which was some of our favourite food that I have combined together as a meal. 

I have the oven working on the mushroom and cheese, the grill pan on the bacon and the deep pan on the poached egg at the same time, while I prepare the salad.


For the Portobello Mushrooms, I spreaded 1/2 teaspoon of butter and seasoned it with salt and pepper.  I let it grill in the oven at 250c for 10 minutes.  In between grilling, I turned the mushrooms and let it the other side of the mushroom soak up and juice and continue grilling.  Just before the mushrooms are done, place 1 or 2 slices of ham on the mushroom to heat it up.

I sprinkled some Shredded Parmesan Cheese on a piece of baking paper and let it turn brown and crisps at the same time as  the mushrooms are grilling.

Meanwhile, pan grill the bacon till they are brown and crispy. Let them sit on paper towel to drain excess oil.

While the rest are cooking, have a a pan or pot filled with water deep enough to cover eggs.  Let the water be in a gentle simmer.  You will see tiny bubbles from the base of the pan or pot but the water should not be jumping. reduce the heat to the lowest you can get just to maintain heat.  Add a teaspoon of vinegar to the water. 
Now, crack the egg into a bowl (I'm using cold eggs).  Gentle pour out into the pan with hot water.  Let it simmer for about 4 minutes or to your preferred done-ness.  Use a slotted spoon to gentle remove the egg.  You can do a few eggs together or one at time.

Dish the mushroom with ham on the plate. Gently place the poached egg on the mushroom. Top with bacon, Break the Parmesan chips into smaller pieces and sprinkle over. Drizzle with truffle oil and season with salt and pepper.

Breakfast is served.

I wasn't well hence I bought out my waffle maker and used the hotcake premixed to make some waffles.  I sandwiched them with ham and cheese and served it as breakfast.

Minimum preparation and washing. Good for the sick and tired homecook.

{ Breakfast : Burger with Warpped with Bacon }


This is one of those 'clear the fridge' breakfast.

Meat patty is pan grilled half done before wrapping it with bacon before returning to the grill to continue cooking till the bacon is brown and meat patty is cooked. It is sandwiched between a slice of cheese and sauteed button mushroom.

{ Dinner: Japanese Inspired }


The weather has been a truant lately.  Every time I cook, I feel like I'm going to die from both the heat from the terrible weather as well as from cooking.

I have been either cooking really simple quick one pot dinner or eating out. Even if  when I cook I don't have to strength or mood to take any food pics after that. Not even from the mobile phone. (These 2 pics here were taking using my mobile phone ;P)  I just want to quickly clean, wash up and get out of the kitchen to have a shower.

Yesterday, I thought, frying some chicken and mushroom (on top of cooking ramen) wouldn't be that bad but I was so wrong. I think the cooking almost killed me. I ended up eating only a small portion of fried chicken and mushroom, the okra and LOTS of salad! I didn't have ramen cos it's just too hot to enjoy it.

Well, the kids enjoyed it. My daughter actually had 2 servings of ramen. My sweet daughter helped washed all the dishes after that while I head for the showers and she actually vacuumed the house while I was making dinner.  Don't even ask about my son. :/  Humph!

Anyways, here's what's on our dining table last night (that almost killed me :P),

{ Breakfast: The everything in it Sandwich }


Making breakfast is getting boring.
One always want egg and no bacon. The other always want bacon but no egg. Always on loggerheads. :P


Today's breakfast, as usual, one had sandwich with everything except egg and the other had everything except bacon. =_=||  The little one had her favourite Cream of Asparagus. The elder one skipped that.

Me and the Math Tutor had everything.   Making breakfast also so difficult. :P

{ Breakfast: Creamy Ham & Cheese on Thick Toast }


I used to order a similar Toast from a certain Tea Room (茶餐厅).  I haven't have this for a long time as I find it too expensive.

I have already forgotten how it tasted like since it has been a few years since I had this.  Making my own version for breakfast today.


Ingredients:
  • 2 slices Thick Bread
  • 2 slices Ham
  • 2 tablespoon Japanese Mayonnaise
  • 1 1/2 teaspoon Worcestershire Sauce
  • 2 tablespoon Mozzarella Cheese
  • 1 tablespoon Parmesan Cheese
  • Paprika
  • Dried Parsley 

How to do it:

  1. Dice ham and mix them with Worcestershire Sauce and Mayonnaise.
  2. Spread the mixture on bread.
  3. Top with both Cheese.
  4. Sprinkle on Paprika and Dried Parsley.
  5. Toast in preheated oven at 240c for 5 mins or till the cheese melts and starts to brown.
  6. Serve immediately.

{ Breakfast : Bunnies Sandwiches }



Opps ... Another short post on meal idea.  I'll get back to recipe post soon, I hope. :P

This was last Sunday's breakfast. I overslept and had to get rush to get breakfast done as my son was having tuition. This is similar to the doggies sandwiches I made some time back. I made egg mayo as fillings here.

This morning's breakfast was burgers made using Hotcakes.

The kids finished all the milk. I had to use the cream capsule meant for my husband's coffee to make some milk.  I told them it's clear to fridge day but they don't have to act so fast also mah.

{ Breakfast : Burger with Chicken in a Biskit }


This was today's breakfast.

I made the kids' favourite cheesy meat patties, this time with a folded slice of mozzarella cheese in it instead of the usual cheddar cheese.

This time I coat it with Chicken in a Biskit for extra flavour. The usual coating will be with panko for the crunch. You can use cream crackers too for a cheaper way.

If you like your meat patties real crunchy, you got to try using rice krispies!

{ Breakfast : Burger with Egg and Mushroom }


This was Sunday's breakfast.

The kids have been asking for burgers very often for weekend burgers. =_=||  They really like the meat patties so much. :P

This time round, I made smaller meat patties but a bit too small till you can't even see it. It's in between the cheese and the omelette.  The egg was seasoned with salt and pepper and also drizzled with truffle oil. I topped it with sauteed button mushroom too.

{ Breakfast : Caramelised Peppered Bacon with Sausage }



This was my son and his tutor's breakfast today.  We love the Caramelised Bacon with Black Pepper. It's a nice change to the usual salty bacon. Not sure if the tutor like it though.

My daughter doesn't like bacon or this type of sausage. =_=||| She had her kaya sandwiches and scrambled eggs (what else!). She asked for garlic bread after that. And so this mum, when ahead to make the garlic spread and made a few using hotdog bun for everyone to share. No pictures here on that but you can check on my Instagram on it.
