In viticulture (grape-growing), veraison is the onset of ripening. The term is originally French (véraison), but has been adopted into English use. The official definition of veraison is "change of color of the grape berries". Veraison represents the transition from berry growth to berry ripening, and many changes in berry development occur at veraison.
Process
Grape berries follow a double sigmoidgrowth curve. The initial phase of berry growth is a result of cell division and cell expansion. As berry growth of phase I slows this is termed the lag phase. The lag phase is not a physiological growth stage, but an artificial designation between the two growth periods of grape berry development.
Post-veraision, fruit acidity decreases due to degradation of malic acid. The degradation of malic acid during ripening makes tartaric acid the predominant acid; grape berries also possess a small amount of citric acid. Tartaric acid accumulates early in phase I of berry growth, while malic acid accumulates at the end of phase I berry growth.
What Is Veraison in Wine Grapes? Getting Flavor from Color
Veraison is the stage in the growing season when wine grapes change color from green to red and begin to develop flavor. Some California winemakers explain veraison, and why it's so important to get color in winegrapes.

Black Hills Estate Winery - Veraison Explained SUMMER
The last stop in our summer series is on the Black Sage Bench in British Columbia's hottest sub-region in the South Okanagan. There are few better people to ask about veraison, when grapes finally change colour, than winemaker Ross Wise who is one of a small group of Masters of Wine. He also shares some knowledgable thoughts about veraison’s relationship to the ever-increasing concern of smoke taint.
It’s another busy season amongst BC’s winegrowers, but where summer a lot of busywork fall will be an intense series of marathons days with little sleep. Join us for the fall series this October on Gismondi on Wine as we continue our insiders look at a year in the life of BC’s winegrowers.

Veraison Thinning Grape Clusters in Summer | Vineyard Farming for Flavor
Assistant Winemaker Ronald Du Preez discusses the importance of veraison thinning grape clusters: dropping unevenly ripened grape clusters to the ground. Veraison, the color change in grapes, begins in July or August, depending on weather. In years with cool summer temperatures like 2010, it is very important to remove unripened and unevenly ripened clusters from the vines to balance their energy and ensure the best, most uniform grapes get fully ripened in time for harvest before the summer ends. The flowering and the veraison
From the wine stock through to distillation, discover the vine key steps with Maison RIGAL.
The “floraison” is the stage in the vine’s growth cycle when the flowers, which will lead to the future grape berries, appear.
the “véraison” is when the grape berries plump out and turn from a green to a bold red colour for the black grapes, or to a translucent yellow for the white grapes, and to pink for the grey grapes. The grapes start to take on the colour they will have when ripe. The grapes, which have been hard up until this point, now soften.
