☕️+🍌 BANANA PEEL SACCHARUM ♻️ and a Zero Waste Coffee Cocktail ‘PUCKS + PEELS’ (Episode 1/3)
This is the first episode in the ‘Coffee and Banana’ series where I push the boundaries of ingredients and their by-products to make delicious drinks, reducing or eliminating waste.
First we make Banana Peel Saccharum from leftover banana peels, followed by a Zero Waste Coffee Cocktail inspired by one of my favourite desserts in the world, called Pucks and Peels (made from leftover coffee / espresso pucks and banana peels)!

How to make Oleo Saccharum and the Oily Smoke cocktatil recipe, TOTR original

Oleo Saccharum is an old school ingredient used in the early ages of cocktails as one of the main ingredients in Punch recipes. Believe me when I say that it has all its rights to be also an ingredient of choice in today's cocktail recipes. This delicious rich orange oil flavoured syrup recipe is very simple to make. All you will need is orange peels, sugar and a few hours ahead of you.
Here's how we do
Oleo Saccharum recipe
7 large organic unwaxed orange peels
1 cup sugar
Peel 5 oranges and place them in a glass jar
add 1 cup of sugar and muddle lightly
add the peels of 2 more oranges and muddle again
Close the jar and let at room temperature for 24 hours.

Oleo Saccharum is a classic punch base making a big resurgence now that the cocktail revival is in full swing. The term itself is Latin for "Oil Sugar" and consists of coating citrus peel in sugar and then muddling the peel to extract the oil. Once the oil is extracted it's allowed to sit while the sugar pulls moisture from the peel making a fragrant syrup out of the sugar and fruit's essential oils. This 5-star hotel is 35 km from Madeira's capital Funchal.
The large hotel occupies three buildings.
The hotel has three swimming pools in addition to the spa.
The outdoor pools are beautiful, but the water in December is too cold for swimming.
Most of the hotel territory is located on the rooftop, on a hillside: viewpoint, garden, swimming pools.
I paid for this room (2 adults + 1 child, sea view, all inclusive) € 140 per night.

Oleo Saccharum is a classic punch base making a big resurgence now that the cocktail revival is in full swing. The term itself is Latin for "Oil Sugar" and consists of coating citrus peel in sugar and then muddling the peel to extract the oil. Once the oil is extracted it's allowed to sit while the sugar pulls moisture from the peel making a fragrant syrup out of the sugar and fruit's essential oils. It is a must know for not only anyone who wants to prepare classic punches, but also for making some one off punches and a few cocktail preparations.

- 200g Fresh espresso pucks (you can ask your local coffee shop for these if you don't brew espresso at home. Make the same day)
- 200g Golden caster sugar (or your choice of sugar)
- 400g Strong filter coffee or leftover batch brew
- 200g Your spirit of choice
Method: Combine the espresso pucks and sugar until they make a thick, glossy paste. Add coffee and spirit, mix and paper strain. This can be bottled and stored in the fridge to be added to loads of different coffee cocktails.

This 5-star hotel is 35 km from Madeira's capital Funchal.
The large hotel occupies three buildings.
The hotel has three swimming pools in addition to the spa.
The outdoor pools are beautiful, but the water in December is too cold for swimming.
Most of the hotel territory is located on the rooftop, on a hillside: viewpoint, garden, swimming pools.
I paid for this room (2 adults + 1 child, sea view, all inclusive) € 140 per night.
An unexpected disadvantage is the weak wi-fi in the room. To watch YouTube before bed, I had to go out into the hallway.
Breakfast, lunch and dinner at the hotel are organized as a buffet
There is a pebble beach next to the hotel. But it is better to walk 800 meters to the artificial lagoon, where there is sand and no waves.

Oleo Saccharum translates to Oily Sugar. A super simple syrup recipe that is essential for many well known punch recipes such as the Fish House Punch.

Jeffrey Morgenthaler's method involves vacuum sealing a bag - which works amazingly and helps preserve your citrus oil for longer....BUUUT if you don't have a vacuum sealer and just want to use it once off then simply add your sugar and citrus peel to a glad bag, squeeze out the air...bash it around and voila (well, voila after 24 hours)! You'll have some pretty darn citrusy oleo for your next punch!

- 4 Lemons (peeled)
- 1 cup of sugar (approx. 200g)
METHOD
