Papillote Salmon Recipe
Prepare a large sheet of baking paper, enough to fit a whole fish, or fish fillets if you are less hungry. We are using a salmon fillet here.
Start by layering thinly sliced potatoes and the white parts of leek as seen in the video. Then place the salmon fillet on top and liberally season it with salt and pepper.
Next, add about a clove of minced garlic on top of the fish. Followed by sliced shallots, slices of lemon and the remaining green parts of chopped leek. Add some cherry tomatoes around the sides of the fish.
Pour some strained lemon juice, about 3 or 4 tbsp worth over the fish. Drizzle some extra virgin olive oil over the fish before adding a few sprigs of dill on top.

minced ginger, thumb-size
1/2 c minced onions,
1 medium tomato, diced
2 cloves garlic, minced
2 stalks spring onions, sliced
2 bay leaves
basil leaves, a pinch

1 tsp soy sauce
1 tsp sesame oil
salt and pepper to taste
First, season fish with salt and pepper including the cavity. Combine all the above ingredients as stuffing then prepare pan or foil for baking or steaming. Put some filling on the pan or foil before laying the fish to prevent sticking. Fill the cavities with stuffing and spread the rest around the fish.
Let the fish absorbed the juice for a few minutes and bake at 350F for 20- 25 min or until the internal temperature reaches 165F/74C ( f...

Prepare a large sheet of baking paper, enough to fit a whole fish, or fish fillets if you are less hungry. We are using a salmon fillet here.
Start by layering thinly sliced potatoes and the white parts of leek as seen in the video. Then place the salmon fillet on top and liberally season it with salt and pepper.
Next, add about a clove of minced garlic on top of the fish. Followed by sliced shallots, slices of lemon and the remaining green parts of chopped leek. Add some cherry tomatoes around the sides of the fish.
Pour some strained lemon juice, about 3 or 4 tbsp worth over the fish. Drizzle some extra virgin olive oil over the fish before adding a few sprigs of dill on top.
Take another sheet of baking paper of roughly the same size and cover over the entire fish. Fold in the edges of both sheets until there are no gaps, as seen in the video. Fold all around the fish to create a sealed in bag.
Transfer to a baking tray and bake in the oven for 20 to 25 minutes (depending on the thickness of the fish) at 200 Celsius no fan. When it’s done, there will be a lovely aroma coming out of the bag. Transfer to a serving plate big enough to hold the fish.
Use a pair of scissors to cut a few slits at the center to let out the steam. It should smell even more gorgeous now. Simply open the bag petals and serve. Garnish with more dill.
The fish should be moist, tender and delicately sweet from the herbs and vegetables. It’s one of the finest ways to eat fish so go try.

Halibut en Papillote

Yield: 4 servings
Ingredients
1/2 cup Kalamata olives
2 tablespoon capers, rinsed
2 cloves garlic
1 anchovy fillet
1/2 cup extra-virgin olive oil, plus extra for drizzling
Kosher salt and freshly ground black pepper
1 head fennel, quartered and sliced paper-thin
2 leeks, white parts only, split, thinly sliced, and washed
1 lemon, sliced into thin wheels
Four 4- to 6-ounce halibut fillets
4 tablespoons white wine
1 Calabrian chile, minced
Fresh basil, for garnish
Directions
Preheat the oven to 400 degrees F.
Add the olives, capers, garlic and anchovy to a food processor. Add 1/2 cup olive oil and black pepper to taste. Process to form a silky paste with small pieces of olive and capers remaining, 15 to 20 seconds. Drizzle in more olive oil as needed. Remove the tapenade from the carafe, then drizzle with olive oil and set aside.
Drizzle the center of each of 4 large circles of parchment paper with some olive oil, then sprinkle with salt and pepper. Top each piece with a thin layer of fennel and some leeks. Top each with a dollop of the olive tapenade and 2 to 3 lemon slices. Lay the fish on top of the lemon slices and sprinkle with salt and pepper. Fold the parchment in half to cover the fish, then crimp the edges shut, being sure to cover the corner of each previous fold. When you are halfway through folding, add 1 tablespoon of white wine to each packet, then continue to fold until the entire package is formed and closed. Place each packet on a baking sheet.
Bake the fish for 8 to 10 minutes. Remove from the oven, then place each packet on a plate. Cut open the top of the paper to expose the fish. Garnish each fillet with the Calabrian chiles and basil. Serve immediately.
