Otto's Sausage Kitchen, formerly Otto's Meat Market, is a sausage restaurant and meat market located in the Woodstock neighborhood of Portland, Oregon, United States. German immigrant Otto Eichentopf established Otto's Meat Market in Aberdeen, Washington in the 1910s before relocating to Portland in 1921. Otto's Meat Market opened on Southeast Woodstock Boulevard in 1922. A new building was constructed at its current location in 1936–1937. Eichentopf's son Edwin acquired the store in the 1940s; Edwin's son Jerry, who began working at Otto's full-time starting at age eighteen, acquired the stores in 1983. Since then, he and his wife have expanded the retail part of the store. The family, which now includes the couple's children and extended members, makes more than forty sausage varieties on site, including some based on Eichentopt's recipes from Germany.
History
Otto Eichentopf, born in Germany in 1890, started Otto's Meat Market in Aberdeen, Washington in the 1910s. In 1921, Eichentopt relocated to Portland, Oregon with his wife Selma and their son Edwin. Otto's Meat Market opened on Southeast Woodstock Boulevard in 1922. A new building was constructed at its current location in 1936–1937. The building included a smokehouse that spanned two stories. Moreland Market was located in the front of the building, and Eichentopf and his son continued to make sausage in the back.
Otto's encyclopedia (Czech:Ottova encyklopedie or Ottův slovník naučný), published at the turn of the 20th century, is the largest encyclopedia written in the Czech language. For its scope and the quality of the writing, it is comparable to the greatest world encyclopedias of its time, such as Encyclopædia Britannica.
The first edition
At the beginning of the 1880s, Jan Otto, a Czech book-seller and publisher, began planning a new general Czechencyclopedia. He was inspired by the first Czech encyclopedia by F. L. Rieger, a fourteen-volume work published between 1860 and 1874, but wanted to go further. For a long time Otto could not find an eligible editor-in-chief until he began to cooperate with Jan Malý, a former co-editor of the Reiger's encyclopedia, who laid down a concept of the new work with a proposed name - Czech national encyclopedia (Národní encyklopedie česká) in 1884. After Malý's death the following year, Otto found a new editor-in-chief, Tomáš Masaryk later the president of Czechoslovakia, and in 1886 the actual work began (Masaryk himself writing the psychology, sociology, philosophy and logic disciplines). The next year, Masaryk got involved in a tempestuous dispute over the authenticity of the allegedly historical Zelenohorský and Královedvorský manuscripts and resigned from the editorship. Otto managed to establish a new editorial group from prominent technicians, theologians and representatives of Czech universities. Their intensive work and the work of their collaborators lead to the publication of the first volume of the encyclopedia, under the name Ottův slovník naučný (Otto's encyclopedia), in January 1888. From that point onwards, the work progressed without major problems and volumes were published regularly until the last (28th) one appeared in 1908.
Get to know the family behind Otto's Sausage Kitchen, a Portland staple for nearly 100-years. This German sausage kitchen serves up some of the best Sausages in the Country. As the fourth generation of Eichentopf's prepare to take over the family business, exciting changes, and tradition combine to create a heartwarming story.
Special thanks to my friend Clara Thibodeaux for helping out with some of the camera work on this project.
A very special thank you to the entire Eichentpof family for taking part in this project.

A Family Tradition of Sausage Makers
From the archives: this holds a special place in our hearts. It was the first story we published (May 2006) about a 4th generation sausage maker. On the day we filmed, 86 year old Edwin (Otto's son) showed up unexpectedly so we were able to talk with him as well.

Otto's Sausage Kitchen & Meat Market
On my way from Tillamook Oregon to Ridgefield Washington, I stopped off in Portland at Otto's Sausage Kitchen & Meat Market. This restaurant is 100 years old and is still in the same family as the founder. They make all their sausages and smoke all their meats in-house. It was featured on Diners, Drive-Ins and Dives, which most of you know I am a huge fan of that show, so when I get a chance to stop by one of the featured places, I try to do so. The Mad Otto sandwich was a real treat! Also had homemade root bear on tap which was really good as well. Enjoy!

Her first sausage from Otto's! It was nasty, they were bringing in full skinned pigs in the backdoor, and we were eating the output out front.
