The Jack Rose - an easy applejack recipe!
In today's video I'm making the Jack Rose! There have been different claims as to the namesake of this drink, but the way I see it, it's made with appleJACK and has a ROSE hue from the grenadine. Pretty simple - very tasty. It only calls for three ingredients, so the quality of those ingredients will show! Use a good pomegranate grenadine and fresh citrus (lemon or lime). How to make a Jack Rose
What better way to Kick off National Applejack Month than to make the most iconic and recognizable Applejack Cocktail, the Jack Rose?
Although the history of the Jack Rose is disputed most people credit it's creation to New Jersey barman Frank J. May whose nickname was Jack Rose. It's American Apple Brandy (Applejack aka Jersey Lighting) base is America's first distilled spirit and the oldest continuously distilled spirit as well. It is stilled being produced by the Laird's distillery in Monmouth County New Jersey.

Jack Rose Cocktail - Drink Recipe
RECIPE SOURCE: Although the same recipe is available from multiple sources, I used "The Bar Book" by Jeffrey Morgenthaler for both the drink and grenadine recipes.
INGREDIENTS USED (IN ORDER SHOWN):
3/4 oz (22.5 ml) fresh lemon juice
1/2 oz (15 ml) grenadine syrup
1 1/2 oz (45 ml) applejack
Garnish with a twisted lemon peel
EQUIPMENT USED:
Cocktail glass (coupe glass)
Boston shaker
Hawthorne strainer
Fine mesh strainer (optional)
INSTRUCTIONS:
Fill the small shaker tin with ice. Add the lemon juice, grenadine, and applejack brandy to the large shaker tin. Combine the tins and shake for roughly 10 seconds. Put your Hawthorne strainer on the large tin, and using a fine mesh strainer, pour the drink into a chilled cocktail glass.

Jack Rose is a classic cocktail, popular in the 1920s and 1930s, containing applejack, grenadine, and lemon or lime juice. It notably appeared in a scene in Ernest Hemingway's 1926 classic, The Sun Also Rises, in which Jake Barnes, the narrator, drinks a Jack Rose in the Crillon Paris hotel bar while awaiting the arrival of Lady Brett Ashley.
The Jack Rose is one of six basic drinks listed in David A. Embury's classic The Fine Art of Mixing Drinks.

1/2 oz Grenadine
You can play around with the proportions of Lime Juice and Grenadine to your liking. I like my tarts slightly less sweet and more tart so I lessen the grenadine and up the lime juice.

1.5 oz. (45 ml) Laird's 100 proof Straight Apple Brandy
3/4 oz. (22.5 ml) homemade grenadine (recipe below)
3/4 oz. (22.5 ml) fresh lemon OR lime juice

3 cups white sugar
2 cups 100% pomegranate juice
1 tsp pomegranate molasses
1/2 tsp rose water
In a medium sauce pan, combine sugar, pomegranate juice, and pomegranate molasses. Stir over heat until sugar is completely dissolved. Remove from heat and add rose water. Stir to combine.

16 oz (455g) granulated sugar
The quick and easy method is to just heat equal parts pomegranate juice and sugar until blended. It won't taste as good as the other version, but it's still way better than the sugar water they sell in grocery stores.

Applejack is a apple distillate, apples are harvested, pressed into juice, fermented into cider, and distilled into spirits. After that with a bit of aging the Applejack is ready to drink. Traditionally Applejack is produced doing something called Jack Distillation or Jacking, which involved freezing the cider and pulling out the ice parts (water) to leave the alcohol behind. This is unsafe and unhealthy and strongly discouraged. No Applejack producer today uses this method. Where does the name come from? There's a story about a yeg (old timey safe cracker) by the name of Bald Jack Rose that's gone around a bit, but this seems to be an unlikely story, at least according to Wondrich. The drink makes appearances in Ernest Hemingway's The Sun Also Rises and in David Embury's The Fine Art of Mixing Drinks. The earliest mention of the drink in print go to 1905 where the drink was likely invented in New Jersey by Frank J May. It's not until 1913 that Bald Jack Rose makes his appearance in the headlines, actually negatively impacting sales of the drink.

There's a story about a yeg (old timey safe cracker) by the name of Bald Jack Rose that's gone around a bit, but this seems to be an unlikely story, at least according to Wondrich. The drink makes appearances in Ernest Hemingway's The Sun Also Rises and in David Embury's The Fine Art of Mixing Drinks. The earliest mention of the drink in print go to 1905 where the drink was likely invented in New Jersey by Frank J May. It's not until 1913 that Bald Jack Rose makes his appearance in the headlines, actually negatively impacting sales of the drink.
Jack Rose Ingredients:
- .5 oz or 15 ml Grenadine
- 1 oz or 30 ml Lime Juice
- 2 oz or 60 ml AppleJack
- Shake

It has also been posited that the Jack Rose was invented by Joseph P. Rose, a Newark, New Jersey restaurateur, and named by him "in honor" of a defendant in a trial then being held at the courthouse in that city. (Joseph P. Rose once held the title of "World's Champion Mixologist.") However, the most likely explanation of the name is the fact that it is made with applejack and is rose colored from the grenadine. Harvey's Famous Restaurant in Washington, D.C. claimed to be the originator of cocktail.[2]
The cocktail has fallen out of fashion. In June 2003, the Washington Post published an article [1] that chronicled two writers' quest to find a Jack Rose in a Washington, D.C. bar. After visiting numerous bars, they were unsuccessful in finding one, ultimately buying a bottle of applejack for one of the few bartenders they encountered who knew how to make one.

1/2 oz Grenadine
You can play around with the proportions of Lime Juice and Grenadine to your liking. I like my tarts slightly less sweet and more tart so I lessen the grenadine and up the lime juice.

The modern consensus is that all drinks that call for grenadine should be made from a real pomegranate syrup, but what if that is not completely accurate? While I have not researched this myself and don't want to speculate too much, if grenadine was made from something other than pomegranates in the past that might be why Rose's tastes so much different than grenadine made from only pomegranates.
When Trader Vic began bottling his own *Pomegranate Grenadine Syrup* (labels are from 1946) it was made from sugar, water, pomegranate extractive reinforced with artificial flavoring, tartaric acid, and artificial color. Was he always using something with an artificial flavoring, or was the Grenadine he used before his own bottling fundamentally different?
The original purpose of this video was to compare grenadine made from real pomegranates vs one made from POM Wonderful juice from the store. When tasting on their own, there is a difference in the overall brightness and fruit flavor of the two, and the fresh tastes better to me.
In the original Grenadine video I made (https://youtu.be/HYl_Puj_fkw) I followed the Tropical Standard recipe and added citric acid. While it's only a small amount, in the version I made for this video I did not use any citric acid or orange peel and instead used fresh whole pomegranates quartered and put them through this juicer: https://amzn.to/3Rpqzyw but if you do make your own grenadine, follow that recipe as the acid and orange oils make a superior grandine.
They were both Brix tested to 50 Brix.
