Grilling

Grilling is a form of cooking that involves dry heat applied to the surface of food, commonly from above or below.

Grilling usually involves a significant amount of direct, radiant heat, and tends to be used for cooking meat quickly. Food to be grilled is cooked on a grill (an open wire grid such as a gridiron with a heat source above or below), a grill pan (similar to a frying pan, but with raised ridges to mimic the wires of an open grill), or griddle (a flat plate heated from below). Heat transfer to the food when using a grill is primarily through thermal radiation. Heat transfer when using a grill pan or griddle is by direct conduction. In the United States, when the heat source for grilling comes from above, grilling is called broiling. In this case, the pan that holds the food is called a broiler pan, and heat transfer is through thermal radiation.

Direct heat grilling can expose food to temperatures often in excess of 260 °C (500 °F). Grilled meat acquires a distinctive roast aroma and flavor from a chemical process called the Maillard reaction. The Maillard reaction only occurs when foods reach temperatures in excess of 155 °C (310 °F).

Grilled (film)

Grilled is a 2006 comedy film starring Ray Romano and Kevin James. It was released direct-to-video in the United States on July 11, 2006.

Premise

Maurice (Romano) and Dave (James) are door-to-door meat salesmen who need to make a sale to keep their jobs. After several unsuccessful attempts, they meet Loridonna (Sofia Vergara), who is interested in the guys' meat as well as what they are selling. They arrive as she is on the phone with a desperate friend and she convinces them to drive her to the friend's house. She turns out to be Mafia princess Suzanne (Juliette Lewis). Once there, they encounter mobster Tony (Kim Coates) and two hitmen.

Plot summary

Maurice and Dave try but fail to sell steaks to people through a mail service. Tired of their incompetence, their boss gives them cards with the names and addresses of their highest buyers, warning that this is their last chance. Dave loses all but one of the cards. It leads to a woman named Loridonna.

Loridonna is on the phone with her friend Suzanne, who has swallowed a fish and needs help. Loridonna lies that Dave is a doctor and gives him the phone; while Dave is talking to Suzanne, Loridonna talks seductively about wanting Maurice's "meat". Turned on, Maurice tries to seal a deal, but Dave says Suzanne wants to kill herself. They drive Loridonna to Suzanne's house, where they discover that she's an alcoholic whose suicide was a false alarm.

"Grilled" is the second episode of the second season of the American television drama series Breaking Bad, and the ninth overall episode of the series. It was written by Charles Haid and directed by George Mastras.

Plot summary

Having been kidnapped by a crazed Tuco, Walt and Jesse are held prisoner in a desert hideout where he takes care of his sick uncle, Hector Salamanca. Hector was once a drug kingpin but now is incapacitated because of a stroke, but can communicate with a desk bell. Hank and the DEA have rolled Tuco's entire organization, and Tuco thinks that one of his associates ratted him out.

Walt unsuccessfully tries to feed Tuco the poison he prepared. Hank, meanwhile, takes a bit of time off to look for Walt. Skyler is sick with worry and has been distributing handbills with Walt's photo. Hank remembers that Jesse Pinkman was Walt's source of marijuana and tries to track him down. Using his bell to communicate, Tuco's mute wheelchair-bound uncle alerts him to the fact that his prisoners are up to something. Tuco takes them outside and plans to kill them. Walt and Jesse manage to wound Tuco and escape. Hank shows up looking for Jesse, and is confronted by a wounded Tuco. A brief firefight ensues and Hank shoots Tuco dead.

Grilling

Grilling is a form of cooking that involves dry heat applied to the surface of food, commonly from above or below.

Grilling usually involves a significant amount of direct, radiant heat, and tends to be used for cooking meat quickly. Food to be grilled is cooked on a grill (an open wire grid such as a gridiron with a heat source above or below), a grill pan (similar to a frying pan, but with raised ridges to mimic the wires of an open grill), or griddle (a flat plate heated from below). Heat transfer to the food when using a grill is primarily through thermal radiation. Heat transfer when using a grill pan or griddle is by direct conduction. In the United States, when the heat source for grilling comes from above, grilling is called broiling. In this case, the pan that holds the food is called a broiler pan, and heat transfer is through thermal radiation.

Direct heat grilling can expose food to temperatures often in excess of 260 °C (500 °F). Grilled meat acquires a distinctive roast aroma and flavor from a chemical process called the Maillard reaction. The Maillard reaction only occurs when foods reach temperatures in excess of 155 °C (310 °F).
