Enjoy a culinary story from the Godfather of U.S. cuisine in Taiwan, and catch Dennis as he learns how to cook steak like a pro! Dennis chats with his friend executive chef and culinary director Cale Jackson in this episode of The Taipei Tonight Show.
Chef Cale Jackson chats to Dennis about his experiences as a chef and restaurant consultant in Taiwan. The pair chat about Cale’s influence on Taiwan’s restaurant scene, celebrities who visited his restaurants, and how a kid from Arizona moved across the world for a life in Taiwan. Cale chats about how he initially came to open a branch of Dan Ryan’s Chicago Grill on a two-year contract but never left. Since then he has been instrumental in setting up many iconic North American-style restaurants and consulted for many more restaurants and famous hotel chains. Dennis and Cale reminisce about how they met and the changes in the restaurant scene in Taiwan over the years. They discuss his title of “Godfather of Dry-Aged” (beef) and Cale shares how they make dry-aged beef in Taiwan. Finally, Cale gives Dennis a masterclass on how to cook the perfect steak.
