Calvados (French pronunciation:[kal.va.dos]; English /ˈkælvədoʊs/) is a department in the Normandyregion in northwestern France. It takes its name from a cluster of rocks off the English Channel coast.
History
Calvados is one of the original 83 departments created during the French Revolution on 4 March 1790. It was created from a part of the former province of Normandy. The name "Orne inférieure" was originally proposed for the department, but it was ultimately decided to call the area Calvados after a group of rocks off its coast.
One popular legend ascribes its etymology to the Salvador, a ship from the Spanish Armada that sank by the rocks near Arromanches-les-bains in 1588. It is more likely, however, that the name Calvados was derived from calva dorsa, meaning bare backs, in reference to two sparsely vegetated rocks off its shore.
After the allied victory at Waterloo the department was occupied by Prussiantroops between June 1815 and November 1818.

History
In France
Cider is a pan-European beverage that appears outside of the endemic region suitable for the cultivation of grapes. The production of cider is noted by Roman occupiers, and the tradition maintained in the band of western Celtic territories. Records indicate that Charlemagne was instrumental in fostering a culture of orchards and production during his reign - although its status as a key economic driver was not established until the Norman period. By the fifteenth century, cider consumption paralleled that of wine, and the introduction of new apple varietals and processes from Spain further entrenched cider production in the regions of Normandy and Brittany. In the 17th century, the traditional cider farms expanded, but taxation and prohibition of cider brandies were enforced elsewhere than Brittany, Maine, and Normandy. The area known as "Calvados" was created after the French Revolution, but eau de vie de cidre was already called calvados in common usage. In the 19th century, output increased with industrial distillation and the working class fashion for café-calva. When a phylloxera outbreak in the last quarter of the 19th century devastated the vineyards of France and Europe, calvados experienced a "golden age". During World War I, cider brandy was requisitioned for use in armaments due to its alcohol content. The appellation contrôlée regulations officially gave calvados a protected name in 1942. After the war, many cider houses and distilleries were reconstructed, mainly in the Pays d'Auge. Many of the traditional farmhouse structures were replaced by modern agriculture with high output. The Calvados appellation system was revised in 1984 and 1996. Pommeau got its recognition in 1991; in 1997, an appellation for Domfront with 30% pears was created.

For the latter two to see the light of day, dairy farmer Pierre Aubril pampers his Normandy cows, who produce up to 1,200 litres of 100 percent organic milk every day.

Calvados Omelette Recipe from Gabrielle Hamilton Mind of a Chef Powered by Breville
Calvados Omelette
This dessert is made with leftover French toast batter, and gets a delicious caramelized crust when the alcohol is ignited in the pan. Calvados is a French apple brandy.

Yield: 4 orders
Ingredients
For the batter:
4 eggs
2/3 cup cream
1 Tablespoon plus 1 teaspoon granulated sugar
1 Tablespoon plus 1 teaspoon all-purpose flour
½ teaspoon vanilla extract (use Madagascar or Tahitian, no the Mexican)
pinch salt
4 teaspoons unsalted butter
Combine the ingredients for the batter in a stainless bowl and whisk until thoroughly blended.
For the finishing:
4 Tablespoons Calvados
4 teaspoons butter, softened
2 teaspoons sugar

2. Lift up an edge of the omelette to see the color and when it is golden brown, flip the omelette.
3. Pour in a generous Tablespoon of Calvados and tip the pan to the flame to ignite the alcohol. Be sure that the Calvados you are using is at room temperature and has not been refrigerated.
4. Remove the pan from the stove and let flames burn out, then quickly slide onto a plate.
5. While warm, spread a teaspoon of softened butter over the surface of the omelette and sprinkle with ½ teaspoon of sugar to finish.

With its chalk cliffs and its bright green meadows, the French region of Normandy offers stunning scenery but also iconic local produce. It's in this unique landscape that cider producer Guillaume Capelle grows apples, the local fruit, to make the world-famous Calvados brandy. Meanwhile, Pierre Marie is hoping for a good season for scallop fishing – another emblematic product of Normandy, along with Isigny butter and caramels. For the latter two to see the light of day, dairy farmer Pierre Aubril pampers his Normandy cows, who produce up to 1,200 litres of 100 percent organic milk every day.

Calvados Omelette
This dessert is made with leftover French toast batter, and gets a delicious caramelized crust when the alcohol is ignited in the pan. Calvados is a French apple brandy.

Yield: 4 orders
Ingredients
For the batter:
4 eggs
2/3 cup cream
1 Tablespoon plus 1 teaspoon granulated sugar
1 Tablespoon plus 1 teaspoon all-purpose flour
½ teaspoon vanilla extract (use Madagascar or Tahitian, no the Mexican)
pinch salt
4 teaspoons unsalted butter
Combine the ingredients for the batter in a stainless bowl and whisk until thoroughly blended.
For the finishing:
4 Tablespoons Calvados
4 teaspoons butter, softened
2 teaspoons sugar
Directions
1. Heat 1 teaspoons of butter in a nonstick 6” pan. When foaming, add 2 ½ ounces batter and let set briefly. With a rubber heatproof spatula, pull omelette into the center from noon, 3, 6, 9 o’clock and do that again, from 1, 4, 7 and 11 o’clock until all the loose batter has run into the empty spaces and the omelette is set.
2. Lift up an edge of the omelette to see the color and when it is golden brown, flip the omelette.
3. Pour in a generous Tablespoon of Calvados and tip the pan to the flame to ignite the alcohol. Be sure that the Calvados you are using is at room temperature and has not been refrigerated.
4. Remove the pan from the stove and let flames burn out, then quickly slide onto a plate.
5. While warm, spread a teaspoon of softened butter over the surface of the omelette and sprinkle with ½ teaspoon of sugar to finish.

Calvados (French pronunciation:[kal.va.dos]; English /ˈkælvədoʊs/) is a department in the Normandyregion in northwestern France. It takes its name from a cluster of rocks off the English Channel coast.
History
Calvados is one of the original 83 departments created during the French Revolution on 4 March 1790. It was created from a part of the former province of Normandy. The name "Orne inférieure" was originally proposed for the department, but it was ultimately decided to call the area Calvados after a group of rocks off its coast.
One popular legend ascribes its etymology to the Salvador, a ship from the Spanish Armada that sank by the rocks near Arromanches-les-bains in 1588. It is more likely, however, that the name Calvados was derived from calva dorsa, meaning bare backs, in reference to two sparsely vegetated rocks off its shore.
After the allied victory at Waterloo the department was occupied by Prussiantroops between June 1815 and November 1818.
