Pastry
2 recipes pie crust
(Double the recipe below):
* 1 ⅓ cups (6 ½ oz/185 g) all-purpose flour
* 1 tablespoon powdered sugar
* ⅛ teaspoon salt
* 7 tablespoons (3 ½ oz/100 g) cold butter, cubed
* 1 large egg yolk*
* 2- 3 tablespoons cold water
Maple Filling
* 1 cup (8floz/240ml) maple syrup
* ⅔ cup (4oz/115g) dark brown sugar
* ¼ cup (2oz/57g) butter
* 2 large eggs (room temperature)
* 1 teaspoon vanilla extract
* ½ teaspoon salt

Bloody Candy/Caramel Apples
INGREDIENTS
8 Apples (I used gala)
8 oz white chocolate
2 Cup Sugar
½ Cup water
1 Tbsp Red food dye
lollipop sticks/ branches (cleaned)
METHOD
1. Start out by washing your apples. If the apples don’t stand on the counter, just slice a little off the bottom.
2. Place your lollipop stick in the apple at this point.
3. Gently melt the white chocolate in the microwave or over a ban marie.
4. Spoon the white chocolate all over the apple and allow the excess to drip off.
5. Place them on a tray lined to parchment paper to dry, for roughly an hour. The chocolate has to be completely set before adding the ‘blood’ caramel.
6. To make the blood caramel: Place the sugar and water in a heavy bottomed saucepan. Heat on medium/ low heat until the sugar dissolves. Don’t allow to simmer until the sugar has dissolved.
7. Once dissolved turn up to medium heat and allow to simmer for 4-5 minutes until you see a light caramel color. Turn off the caramel and whisk in the red food dye to reach your desired ‘blood’ color.
8. Let it stand for a minute to cool a little before spooning it over the apples.
9. Spoon the caramel over your apples generously and let it drip down the side for extra effect.
10. Work fast with the caramel as it starts to harden quickly. If it does, don’t worry. Just heat it up again on low heat until it melts. You can repeatedly heat it until it is all gone.
11. Let your apples cool and set, and then enjoy. HAPPY HALLOWEEN!!!!!

Homemade Soft Pretzels (No-Knead, No Machine)
INGREDIENTS
3 cups (420g/15oz) strong flour/bread flour
1 ½ tsp salt
¼ tsp yeast (I used active dried yeast)
1 tbsp sugar
10 ½ ounces water
To poach the pretzels : 6 cups (1 1/2 litre) water
6 tsp baking soda
egg wash
salt
melted butter, to brush pretzels
INSTRUCTIONS
1. In a large bowl add in the flour.
2. Put yeast on one side of the bowl and salt and sugar on the side of the bowl.if you dd the salt on top of the yeast it will deactivate that yeast and your dough will not rise.
3. Add in water and mix to form a dough. That's it, your dough is done!
4. Wrap the bowl tight with film wrap and lay a bowl over it. Put it in a dry place at room temp and leave over night. A minimum of 12 hours, but up to 18 hours and let time do its magic. I do 18 hours :)
5. The next day your double will smell boozy and bubbling. It is pretty incredible.
6. Turn out onto a floured surface and divide into 9 balls and let it and relax for 2 minutes
7. To shape: take each piece of dough and begin rolling them on the counter. Bang the dough on the counter like I do in the video and they will just naturally get longer and longer. Keep going until you reach 24 inches (60 cm). Twist the ends of the dough and press onto the the opposite sides of the pretzel.
8. Put straight into boiling water with baking soda and poach for JUST 30 seconds, then place on a baking tray. This boiling step is the secret to firm skin and adds that definite pretzel flavor.
9. Brush with egg wash and sprinkle with sea salt
10. Bake 450oF (225oC) for 15 minutes, or until golden brown.
11. Serve immediately and enjoy!!!!
