Sometimes good things come in twos. It took over two years for me to nail down this interview with Warren, I recorded over two hours of audio, and it took two visits to do so. Yet every minute I spent with him was a pleasure. You may be aware that Warren was the founder of Stag's Leap Wine Cellars and it was his Cabernet Sauvignon that outscored the French Bordeaux wines in the famed Paris tasting of 1976. But that was early on. He has accomplished so much in his 90 years and, remarkably, continues to do so. He semi-retired in 2007 but is still involved with grape growing in his Napa Valley Arcadia Vineyard. Napa winemaker Warren Winiarski is helping bring new life to landmark UC Davis research
Winemaker Warren Winiarski has donated more than $450,000 toward The Warren Winiarski Fund for Advancing the Amerine-Winkler Index.
Beth Forrestel, an assistant professor in the Department of Viticulture and Enology, is leading the project to update the Winkler Index with sophisticated monitoring technology and remote sensing data to help paint a fuller picture of the environmental factors that most significantly affect plant growth, berry chemistry and, ultimately, wine quality.

Sometimes good things come in twos. It took over two years for me to nail down this interview with Warren, I recorded over two hours of audio, and it took two visits to do so. Yet every minute I spent with him was a pleasure. You may be aware that Warren was the founder of Stag's Leap Wine Cellars and it was his Cabernet Sauvignon that outscored the French Bordeaux wines in the famed Paris tasting of 1976. But that was early on. He has accomplished so much in his 90 years and, remarkably, continues to do so. He semi-retired in 2007 but is still involved with grape growing in his Napa Valley Arcadia Vineyard. He continues to learn yet his depth of knowledge is astounding, and the way his looks at life and winemaking is fascinating. Warren is engaging, charming, and kind of like a great uncle you rarely see but when you do you just want to give him a big hug...and drink his wine.

How Portuguese Port Wine Is Made In The Douro Valley | Regional Eats
Foot treading, stomping grapes by foot to extract the juice, is at the heart of the making of authentic port wine. It is a very traditional and labor-intensive method, yet it is still the one producing the finest ports. We visited Quinta de Vargellas, a wine estate owner by Taylor's, one of the founding port houses.
Although port wine bears the name of the seaport city of Porto, it is actually in the steep hillsides of the Douro Valley in northern Portugal that it has been made for centuries. The region was legally demarcated by the Portuguese government in 1756, meaning that authentic port can only be made here.

From wine elves to classy pitchmen, American winemakers have tried just about everything to challenge the dominance of French vintners. And yet, with infamous labels like Ripple and Thunderbird, Yankee wines had long endured the reputation of being good for just one one thing—getting blitzed.

At Bolney Wine Estate in England, they specialize in red wine, but also produce white and sparkling wine. The sparkling wines go through a slightly different process again. They are fermented in the bottle, each bottle must be spun occasionally to consolidate the sediment that forms. This sediment can then be removed by a process called disgorging.

This is not because virtually every study ever conducted into the field of wine tasting as a whole has concluded that it’s ridiculously easy to convince even the top sommeliers that $5 boxed white wine is the finest red wine ever bottled. Nor is it because wines they would happily sacrifice their first born to have a glass of and would have otherwise raved about, when told the glass contains a variety of some cheap wine they are to identify, are more than likely to claim it tastes akin to horse piss.

The Paris Tasting made Mike Grgich an instant legend, but back then, even the maker of the winning white couldn't believe he had won. "I said are you sure it's me?" recalls Grgich. How could this American, an immigrant who fled communist Yugoslavia, shock the world?
The French wanted to find out, so Jean-Noël Fourmeaux, an official government wine taster became a wine spy. He headed to California to discover how, in the span of a couple of decades, American winemakers progressed from Thunderbird to Grgich's award-winning white.
Fourmeaux encountered a freewheeling atmosphere of technological and cultural innovation—one that attracted the likes of Squire Fridell of Glen Lyon Vineyards, a winemaker who has his own reason for smiling at America's emergence as a leader in wine. Fourmeaux pondered what he could create by mixing French tradition with Yankee innovation, and it led him to a most unexpected decision.

The French wanted to find out, so Jean-Noël Fourmeaux, an official government wine taster became a wine spy. He headed to California to discover how, in the span of a couple of decades, American winemakers progressed from Thunderbird to Grgich's award-winning white.
Fourmeaux encountered a freewheeling atmosphere of technological and cultural innovation—one that attracted the likes of Squire Fridell of Glen Lyon Vineyards, a winemaker who has his own reason for smiling at America's emergence as a leader in wine. Fourmeaux pondered what he could create by mixing French tradition with Yankee innovation, and it led him to a most unexpected decision.

Yeast consumes the sugar in the grapes and converts it to ethanol and carbon dioxide. Different varieties of grapes and strains of yeasts produce different styles of wine. These variations result from the complex interactions between the biochemical development of the grape, the reactions involved in fermentation, the terroir, and the production process. Many countries enact legal appellations intended to define styles and qualities of wine. These typically restrict the geographical origin and permitted varieties of grapes, as well as other aspects of wine production. Wines not made from grapes include rice wine and fruit wines such as plum, cherry, pomegranate, currant and elderberry.
