The owners behind the popular Sorry Not Sorry Creamery are getting in on the smash burger craze with With Love, Always. Burgers start with fresh Black Angus patties seared on a hot griddle until they develop a lacy crust. They come loaded with toppings like American cheese and super thinly sliced onions on a potato roll. The burger restaurant offers soft-serve custard, dipped the old-school way in cherry and birthday cake-flavored coatings.

Chef Joel Myers, most recently executive chef of Osteria Fiorella at Red Rock Resort, helms the kitchen with pasta made in-house — like a rotolo served upright in a play on French onion soup with cheese and caramelized onions. There’s also spaghetti with red sauce and veal meatballs, linguine and clams, and a colorful plate of veal carpaccio with tuna sashimi. Dessert is a show-stopping event, with an elaborate three-tiered presentation of small cakes and treats. And, true to its name, Ciao Vino offers an impressive selection of wine by the glass.

This new steakhouse near the Strat is themed to a Prohibition-era Las Vegas with a chandelier-filled room, dry-aged steaks, and a dedicated whiskey selection. The steak options span dry and wet-aged, American wagyu and Japanese Kobe wagyu. And dinner starts with chilled seafood towers laden with Maine lobster tail, oysters, jumbo shrimp, lump crab, and clams on the half shell, Order a chocolate souffle 30 minutes before you’re ready for dessert as it takes time to bake and is served hot and fluffy.

Spearheaded by Michelin-starred chef Masa Ito and Kevin Kim, the new omakase restaurant at the Fontainebleau. You can order agua fresca juice blends — either spiked or as is. Or go for a boozy El Pajarito in a cactus-shaped glass.

 Chamon goes all in on onigiri and tempura. The tight menu features tempura bowls and a grab-and-go selection of onigiri. A tendon bowl piles hot and crispy ebi shrimp, soft-boiled eggs, lotus rook, and enoki mushrooms over steamed rice. Precisely shaped triangles of onigiri combine seasoned rice with salmon ikura, edamame, and spicy takana greens.

Yellowstone’s Taylor Sheridan partners with Wynn Las Vegas with an elaborate pop-up that merges the Texas barbecue of his Four Sixes Ranch with the extravagance that one can expect from Wynn Las Vegas. The industry veterans behind Piero’s Italian Cuisine and Table 34 have opened a new fine-dining Italian restaurant. Menu highlights include a pan-fried swordfish Milanese in a caviar sauce, braised beef cheek pizza laden with dollops of goat cheese, and a toast layered in ’nduja, caciocavallo cheese, and caramelized onions. Stay late, sipping cocktails like one that emulates a caprese salad — with tomato gin and flavors of balsamic vinegar, strawberry, lemon, basil, and cucumber — until 3 a.m.

Spiegelworld’s new production, Discoshow, debuts on September 7, but its new adjacent restaurant is open now.  Where Discoshow will be all things drag, eccentricity, and acrobatics, Diner Ross approaches the ’70s theme with classic records on the walls, decade-specific ephemera, inventive new cocktails behind the bar, and food that veers away from traditional diner fare. On the heels of the excellent smash burger at Absinthe’s No Pants, the burger here is similarly impressive with a steakhouse blend coated in black pepper and layered with aioli and roasted cherries with a side of gravy for dunking.

José Andrés’s newest Las Vegas restaurant celebrates all things under the sea. A selection of fresh fish is available in preparations such as sashimi and salt-baked and presented whole. Small plates come with delicate shells filled with spicy tuna tartare and Japanese peaches paired with burrata and hazelnut praline. Dessert is a whimsical affair with a crumb sandcastle in a nod to key lime pie.

The Codfather

Following a summer closure, the Codfather has reopened just a few doors down from its original location, meaning an expanded dining area and a bar. It all sets the scene for British-style fish and chips. Flaky cod is coated in crispy golden batter that is both light and rich. Fries are hot and pillowy — just right for dunking into pleasantly tangy tartar sauce.

The centerpiece of Ortikia is an open kitchen with a fire grill and rotisserie and a wood-burning oven. Expect Mediterranean fare like salt-baked and grilled seafood, rotisserie-cooked meats, and grilled vegetables. Ortikia will serve dishes like lavraki sea bass with anchovies and saffron and features a seafood counter and crudo bar, plus Greek desserts.
