Over a period of less three years, a trio of proudly vegan fast casual restaurants have shuttered in the exact same Centennial location and will very soon be replaced by a celebration of charbroiled burgers, chili and hot dogs.

Launched back in June, Vegan Bliss wasn’t able to reach its six-month anniversary at the Centennial Square retail center, located at the intersection of Centennial Parkway and Durango Drive.

A replacement for the plant-based menu of Blinders Burgers & Brunch and the first expansion of VegeWay, created by chef Kenny Chye, the 2,060-square-foot space was upgraded with a drive-thru window.

Aiming to officially debut this week and overseen by the same operators as Vegan Bliss, the new Ernie’s Burgers counter-service concept is announcing it will be open daily from 11 a.m. to 9 p.m., closing at 10 p.m. on Friday and Saturday.

Promising its charbroiled burgers are prepared with “100% Angus beef,” a previewed menu includes the namesake “Ernie”, stacked with American cheese and a “special burger aioli,” plus barbecue, blue cheese and jalapeno options and the “Sunrise,” topped with a fried egg, hash browns, bacon, sausage, Cheddar cheese, and a choice of jam.

Guests can also build their own burger, beginning with a beef patty, or chicken breast. Other selections include chili dogs and a grilled cheese sandwich, plus tater tots, or waffle sweet potato fries as a side dish.
