焼津にある日本料理店。
平日のランチで訪問。
焼津駅からのどかな商店街を歩いて、20分ほどの距離にある。
店の門をくぐり、アプローチを通って、靴を脱いで店内に入る。
焼き場の炭火のパチパチという音が響く、静かな空間。
大将によって炭火と食材との最適な距離感が常に図られている。
温度を上げすぎずに食材の旨みを引き出すに留める、火入れの妙が堪能できる。

白ミルガイとルッコラ
白ミルガイは炭でちょい炙り、温度は低め。
歯応えはちょいシャクシャク。
粒マスタード。
■焼津の鯵の胡瓜巻き
上に梅肉。
■ホワイトアスパラガスと平貝
出汁はアスパラ。
温度は低め。
■焼津の白甘鯛
白甘鯛はほろほろにほどける。
小骨あり。
平茸、自生しているツルナ。
山葵を合わせるのが珍しい。
温度はかなり低め。
