Mexican food may always be the darling of Tucson’s culinary scene, but the city is also embracing an increasingly diverse range of cuisines. Restaurants that previously would have been considered niche are now treasured by the community. Additionally, with the pandemic in the past, several food trucks have made the leap into brick-and-mortar establishments.

From Afghan dumplings to vegan pizza, here are some of the exciting new restaurants in Tucson.

Whole Slvce Pizza

While Whole Slvce isn’t entirely dedicated to vegan offerings, their entire menu is available vegan. This includes vegan versions of meat toppings, such as pepperoni, salami, and sausage. The slow-fermented dough presents itself closer to a New York style crust here; thick and airy Sicilian style is also available.

Kotu Korean BBQ

Kotu’s dining room features neon accents and a dry-aging fridge that proudly showcases primal cuts of beef. If opting in for the premium option, go for the sliced short ribs and beef tongue. Also, be warned that they only seat tables of two or more, so solo diners will be turned away.

Redbird Scratch Kitchen + Bar

Redbird prides itself for making as many items from scratch as possible — the rest (tortillas, buns, coffee, and tea) sourced from local bakeries and shops. The approachable menu features burgers, loaded wings, tacos, and Kennebec waffle-cut fries. The loaded pastor wings are coated in al pastor sauce and served with fresh pineapple, roasted Fresno pepper, red onion, and cilantro.

While Forbes has hopped around town a few locations as a butcher shop, they recently opened their own brick-and-mortar with the addition of a brasserie with beer and wine. For lunch, their classic cheeseburger stands out with the funky flavor of 30-day aged local beef. For dinner, order a plate of classic steak frites with their rich peppercorn sauce and bright ají verde.

Casa Madre

Despite the Spanish name, Casa Madre includes influences from other cultures. The intimate dining room prominently features a backlit Himalayan rock salt wall. Start with a pickled turnip dirty martini and their pork belly wings tossed in black lime brown butter sauce with a side of crisp apple cilantro slaw in a cool yogurt dressing. For the main course, go for the adobo-rubbed rib-eye, topped with chimichurri and accompanied by roasted poblano scalloped potatoes and sauteed vegetables.

Basqueria

Located conveniently at the east side of downtown across from a parking garage, expect a busy crowd late into the weekend nights at Basqueria. With influence from the Basque region of Spain, the menu includes a variety of tapas and paellas. The most popular items include the plump shrimp pintxos, patatas bravas, and olive oil-poached bacalao pil pil.

Samurai Sombrero

Formerly a food truck, Samurai Sombrero expanded with a spot inside of the food hall American Eat Co. They specialize in sushi rolls with a Mexican twist, adding textures and bolder flavors. The vegan Death Free Foodie roll has a pop of fried jalapeno, while the Abigail roll has spicy and cucumber, topped with torched salmon.

Kabul Corner

A small family-run Afghan restaurant and market, seating is limited at Kabul Corner. Their spiced ground beef-stuffed mantou dumplings are adorned with freshly made yogurt. The bolani gandana turnovers are stuffed with leeks and herbs, served with yogurt and chutney. Their naan is baked fresh in their tandoor oven.

Bashful Bandit Barbecue

After a decades-long run as a biker bar, the Bashful Bandit closed in 2021. However, new owners breathed new life into the building as a new Texas-style barbecue restaurant with Arizona influences. Such items include lush green chile pulled pork and zesty chile relleno sausage. While bits of the old biker bar aesthetic remain, the new space features prominent outside seating with a clear view of the pit smokers.

Although Tuxon Chix has a polished chain vibe with the leafy foliage wall and neon logo sign, they are actually a local fast food restaurant. While they specialize in chicken sandwiches, wings, and tenders, the secret star is the tikka masala mac, served with butter toast.
