A Brand-New Vietnamese Place Is Coming to the Matterhorn Building in SE

Even more Vietnamese food is coming to Portland: XinhXinh Bistro, a new, cheerful pho-and-bun restaurant, will open in the Matterhorn Building on SE Madison, Portland Mercury first reported. The building also houses Wasabi Sushi and chocolatey CBD cafe Grön — XinhXinh’s space was home to vegan restaurants Baked Roots Bar and Herbivero.

XinhXinh owner Thang Tran told the Mercury the restaurant will open in September, with usual suspects like banh mi, salad rolls, and a variety of noodles, as well as dishes like bun bo hue and satay. Expect a variety of drinks, as well: The restaurant has applied for a liquor license and will serve boba, smoothies, and Vietnamese iced coffee. Tran will run the restaurant with his girlfriend, Linh Tran, who helped open Vancouver’s well-received pho shop Pho Vi Van — Columbian critic Rachel Pinsky called Pho Vi Van a “pho spa,” so hopefully some of that rejuvenating juju translates farther south.
