Daniel Boulud’s One Vanderbilt restaurant is opening next month
New details are out on chef and restaurateur Daniel Boulud’s upcoming seafood restaurant Le Pavillon, at One Vanderbilt, the Midtown skyscraper adjacent to Grand Central Terminal. The 11,000-square-foot establishment, at the corner of East 42nd Street and Vanderbilt Avenue, will open on May 19, and begin taking reservations on May 1.
Boulud’s restaurant group, Dinex, also made several staffing announcements along with the update on Le Pavillon. Jean François Bruel will serve as corporate chef at both Daniel and Le Pavillon. Michael Balboni and Will Nacev, currently the executive chefs at Db Bistro Moderne and Daniel, respectively, will be co-executive chefs at Le Pavillon. Sébastien Rouxel will take on the mantel of corporate pastry chef and Nancy Schumann will serve as the director of the restaurant.
The seafood establishment, a nod to the famous French restaurant in New York City that closed in the 1970s, has the ability to seat 130 diners, though current restrictions will require the restaurant to operate at half capacity indoors — unless restrictions change by the time of its opening next month. The restaurant doesn’t have any outdoor seating.
