If we had a crystal ball four years ago, would we see the opening of Fish & The Knife Sushi Bar and Lounge this month? After years in progress, and doubts that the place would ever come to fruition, the owner recently told Eater they expected to be open by Feb. 10. They ended up debuting with a media preview instead and will open to the public this this Thursday, Feb. 13. The stunning interior of stone, wood, and glass created by New York City-based architect and designer Tony Chi. (Update: An attorney for Chi denies that the designer was involved with this project, although representatives for the restaurant maintain that he did.) Dark leather seating is complemented by stacked rock covered walls and an aquarium brightens the mood. Bites are prepared by American Iron Chef Bob Iacavone, who is already cooking classic Japanese staples. As it looks so far, Fish & The Knife promises to be well worth the wait.
