Jonathan Shannon came to Greensboro to study electrical engineering at N.C. A&T. He describes AJI Fusion as “a Latin fusion restaurant with a core Peruvian cuisine,†meaning it serves mostly Peruvian food with a few Latin elements here and there.

“I believe in Greensboro…. I’m banking on what Greensboro is going to look like in three years,†said Natty’s co-owner Chris Lester this summer. He's not alone.Â
