This PR updates documentation dependencies to their most recent versions.
I also integrated https://github.com/allejo/jekyll-anchor-headings so that heading now include clickable anchors. This makes it easier to link to specific areas of the documentation.
There's also a table-of-contents plugin that could be useful, but I haven't yet found a way to make the TOC look good.
