Gluten-free diners face plenty of restrictions. In the past, this may have meant sacrificing flavor, but creative Denver chefs are turning the tables on gluten-free cuisine.

From Italian and Brazilian eateries to indulgent bakeries, Pan-Latin American canteens to American classics, here are 15 spots in the Denver area that are not only accommodating gluten-free diets, but celebrating them.

This Boulder restaurant is practically an institution and has been serving locals diners since 1995. It’s a classic with an extensive brunch menu and 99-cent bloody Marys and mimosas. The restaurant has a dedicated gluten-free grill and deep frier to avoid cross-contamination. Some dishes available include griddle cakes, fried chicken and French toast, and bacon-filled pancakes.

Mas Kaos unites Mexican and Italian food at this Pizzeria + Taqueria combo located in the Berkley neighborhood, northwest of Denver. The menu takes cues from the Paleo diet — filled with a lot of grass-fed meats and proteins and seasonal produce. The philosophy extends to the drinks menu as well, which includes alcoholic kombucha, skinny margaritas, and even gluten-free beer.

As the only pizzeria that is VPN (Verace Pizza Napoletana Association) certified in Colorado, this coal- and wood-fired pizzeria serves up not just some of the best gluten-free pizza in the state, but some of the best pizza overall, period. This Neapolitan eatery flies in almost all of its pizza ingredients direct from Italy — San Marzano tomatoes, Prosciutto di Parma, fresh olive oil — including its gluten-free pizza flour. Owners Mark and Kristy Dym lived in Napoli for over six years learning the tricks of the trade; their gluten-free crust is so good, most people can’t tell the difference.

This thin crust pizza spot, which recently opened a second location on Jersey Street in Mayfair that joins the original one downtown, can serve up any of its 12 Colorado-themed pizzas on its 12-inch gluten free crust, which is practically indistinguishable from its regular thin crust. Among the options is the East Colfax, which is made with a green chili-based sauce and topped with cheddar cheese and chicken; the Frank’s Hot Sauce- and pepperoni-laden Red Rocks, and the vegan-friendly Boulder. Take n’ bake pies are also available for those who would like to do the cooking themselves at their own convenience,
