Plus more Denver food news to know today

The Post Brewing Co.

OPENING ALERT: The Post Brewing Co. will open its fourth location Thursday, Nov. 2 at 2027 13th Street in Boulder. Most recently operated by Shine Restaurant & Gathering Place, the new digs came with a 21-year-old brewhouse, Westword reports. The Post will serve its own beers with fried chicken and Southern sides in addition to a full bar menu. Open from 4 p.m. nightly and from 9 a.m. to 3 p.m. for weekend brunch. [Westword]

BACK STORY: Post Brewing Co. owner Dave Query is also behind some of the biggest restaurant brands in Denver and Boulder — Jax Fish House, Zolo Grill, Lola Coastal Kitchen, Centro Mexican Kitchen, and West End Tavern. That last one turned 30 this month, and Query took a moment to reflect on the milestone with 5280. Read about how Query pays his success forward and how he came to call Boulder home. [5280]

OPENING REPORT: The Soul Kitchen has expanded from its original Colfax location, opening a second eatery at 98 Wadsworth Boulevard in Lakewood. The family-owned business specializes in Alabama and Louisiana comfort food, dishes such as fried chicken, catfish, and collard greens. “Literally people can sit here and eat one of our meals and go take a nap,” co-owner Karen Warren tells 303. Dio Mio and Uncle have teamed up to host a ramen popup November 7 at the RiNo pasta restaurant, 303 reports. Diners can choose from three different ramen recipes, three buns, canned sake, and cocktails, all available from 5 to 9 p.m. [303]

FOOD FOMO: Couldn’t snag a seat at one of the world’s best restaurant’s popup dinners in Denver this week? The brothers behind El Celler de Can Roca in Girona, Spain, will cook for a small group of invited guests only Wednesday and Thursday at Halcyon Hotel, marking their first visit to Denver, after previously hosting popups in London, Hong Kong, and San Francisco. So what? The Denver Post explains why it’s a big deal, even for those who didn’t make the cut. [Denver Post]
