The chill in the air is the first sign that summer is behind us and we have not just fall but also winter to look forward to. Before you know it, snow will be here and trips to the mountains will be common occurences, which is why this is great news: The new restaurant at The Ritz-Carlton, Bachelor Gulch will be opening the week of November 20. Earlier this month, the renovation began on the space that was occupied during the last decade by Spago by Wolfgang Puck. Stay tuned for details on the concept and details that is stepping into Puck's big shoes.

While this is in the works, Buffalos, the other restaurant at the resort, just introduced a rotating wild game menu. Sample dishes include the pheasant au vin with smashed fingerling potatoes, autumn succotash and the venison osso bucco with gremolata, grits, and haricot vert. A whole animal roast series now takes place every Wednesday on the outdoor terrace. Whole pig and lamb roasts already took place and more events are planned for the fall and winter.
