Rosslyn’s chill, new Inca Social, which opened in December with a sushi and ceviche bar, will debut a new menu this Monday, January 17 with plenty of the Japanese-Peruvian fusion dishes known as nikkei. This includes ceviche, tiradito, sushi, and causa.
It’s rare to find Peruvian-stye sushi rolls in D.C., but the Peruvian sushi trend has taken over modern Peruvian restaurants in Peru and Miami, according to Inca Social co-owner Fito Garcia. The Peruvian-Japanese dishes are really the hallmark of the modern Peruvian restaurant, he adds.
Because [Inca Social Rosslyn] is bigger, we wanted to distinguish it a little bit with fusion,” Garcia says.
The word “fusion” probably food recalls “a genre of dilettantish restaurant most popular in the mid-’00s,” according to Eater’s Monica Burton. “But to hear Nikkei chefs tell it, Nikkei is not so much a fusion in the 21st-century meaning of the word, but a distinct cultural cuisine, developed over generations.”
Though the new Inca Social threw open its doors on December 21, the kitchen has been focusing on perfecting the traditional Peruvian staples it serves at the original Inca in Vienna. But, the “ceviche and sushi bar is the focus of this [new] place.”
Of the new menu items, Garcia expects a tropical ceviche with mango, pineapple, passionfruit, and shrimp will be the perfect summertime dish on the patio. He says the jalapeño-rich green sauce on the chicken wings would taste amazing on anything—and he wants to eat it every day.
