Crockpot Pork Chops with Mushroom Soup
Fork-tender pork chops! This simple, affordable dinner is delicious, easy to make and the creamy gravy is perfect over potatoes, rice or pasta.
Like the Crockpot Steak and Potatoes Recipe, this recipe requires only 5 minutes of prep time and uses common ingredients you probably have in your pantry. The slow cooker does all the work! This is a great way to get tender chops every time!
Crockpot Pork Chop Ingredients

- pork chops - in the recipe I use bone-in pork chops, but boneless pork chops or pork loin chops are great as well.
- can of cream of mushroom soup - you can substitute with cream of chicken or celery, golden mushroom soup is also delicious!
- chicken stock - or bullion, use whichever you have on hand.
- Canned mushrooms - there's something about mushrooms, I can never get enough! If you prefer, you can use sautéed mushrooms. Also delish!
- ranch dressing mix - you know, the powdered stuff. It's such a great flavor shortcut. Or if you'd prefer substitute dry onion mushroom soup mix for the ranch mix.
- cornstarch - this part is optional, but the sauce is so delicious, why not thicken it a bit and turn it into a gravy for your evening meal?!!
Creative variations to try
These are the best pork chops! Add baby potatoes and peeled carrots to the slow cooker if you want a complete meal. Layer the pork chops on next and top with the sauce. Cook as directed. Best part? The crockpot does all of the work for you!
- Make it a meal by adding diced onions, bell peppers, carrots, and green beans, and serve over mashed potatoes. Mmmm!!!
- Adding 3 ounces of cream cheese to the mixture as it cooks adds a wonderful tangy flavor to the gravy.
- To add even more flavor brown pork chops before adding to the slow cooker.
Step-by-step instructions

- Spray the crockpot vessel with non-stick cooking spray.
- Start by making the sauce. In a large mixing bowl, add the mushroom soup, mushrooms, chicken broth and ranch seasoning mix. Whisk to combine.
- Place pork chops in slow cooker.
- Pour the soup mixture over the top of the pork chops.
- Cover and set the cooker to low heat, cook for 7-8 hours.
- Remove the meat, tent with foil to keep warm and set aside.
- Mix the thickener and add it to the soup.
- Set on high and cook for 10 minutes. The higher temperature will bring the sauce to a boil and help thicken it.
- Top your pork chops with the luscious mushroom gravy and serve!

Pork chops are famous for getting dry. That's not we're looking for! Moist and tender using the slow cooker helps eliminate drying them out. Bone-in pork chops will have more flavor and be juicier. Don't forget to let the meat rest.

That's up to you. Thickening is of course optional, but all that lovely gravy shouldn't go to waste (but to waist, right?!!! 😋)! It only takes a few minutes to make with so little effort. Plus it's delicious!
Add one tablespoon of corn starch to one tablespoon cold water. Whisk until smooth. Pour into the crockpot and stir to combine. Cook for 10 additional minutes to thicken.

There are several different cuts that will work with this recipe. I used bone-in, but use your favorite or use what you have on hand!
- Shoulder or blade chop - Sometimes called a blade steak, it has great flavor, but it is tough. Slow cooked or braised is the best method of cooking.
- Rib or center-cut chop - super lean and great for slow cooking.
- Center cut - more expensive, but super tender and very lean.
- Boneless chop - super tasty and very lean.
- Sirloin chop - a tougher cut of meat great for braising or the slow cooker.
- And last but not least, you could also use a pork roast. Just cut it into 2-inch cubes. It will be amazing!
Remove the pork chops from the refrigerator 30 minutes before cooking. This will allow them to come to room temperature. They will be less likely to get dry.

How to store leftovers
Refrigerate - Allow leftovers to cool completely. Store in an airtight container 3-4 days.

Slow Cooker Pork Chops
Ingredients
- 6 pork chops bone in chops
- 10 ½ oz. cream of mushroom soup
- 1 cup chicken stock
- 6.4 oz sliced mushrooms canned, do not drain
- ¾ oz. ranch dressing mix Uncle Dan's is my favorite brand
- 2 tablespoon cornstarch
- 2 tablespoon cold water
Instructions
- In a medium mixing bowl stir together the mushroom soup, chicken stock, ranch seasoning and mushrooms (including liquid) until well combined.
- Spray the crock pot with non-stick spray, then place the pork chops in the crock pot.
- Pour the sauce over the top of the pork chops.
- Cover and set to low - cook on low for 7-8 hours.
- Remove the pork chops. Careful they will be super tender! Cover with foil to allow the meat to rest and keep warm.
- Combine the cornstarch with cold water. Whisk until smooth. Pour into the slow cooker and increase the heat to high. Cover and cook for 10 minutes to thicken the gravy.
- Serve the chops topped with gravy and enjoy!

Thanks Don! Regarding the crock pot....because I'm new to the "crock-pot" world, I can't say I'm an expert, but here's what I did. The brand is Crock-Pot & I purchased mine from Target - it was about $25 bucks - wasn't the cheapest ($19) and they sure had some that were lots more expensive. The expensive brands had some bells and whistles on it - I'm not interested in that. I've used it several times now and believe it's $'s well spent. Hope that helps!
