New Vegan Cheese-Dedicated Cafe Is Coming to Austin

Austin is getting a vegan cafe and wine shop dedicated to non-dairy cheeses when Rebel Cheese opens in Mueller at 2200 Aldrich Street, Suite 120 this summer. Owners Kirsten Maitland and Fred Zwar wanted to open a restaurant that showcased their “passion for planetary change,” according to a statement, by offering vegan food.

Rebel is all about its house-made vegan cheeses and vegan meats. Of the latter, think eggs made with tofu, lox made with carrots, and fake bacon, pepperoni, and corned beef. There will be sandwiches, salads, soups, and boards, plus vegan grocery products.

They will preview Rebel’s vegan cheeses and such at the Possum Park Party on Saturday April 13 from noon to 5 p.m.

The couple moved to Austin seven years ago from Seattle. Currently, Maitland is a coach with Agile Velocity and Zwar is the co-founder and principal of CPM Contractors.

When Rebel opens, its hours will be from 8 a.m. to 8 p.m. on the weekdays, and then from 9 a.m. to 8 p.m. on the weekends.
