Los Angeles’ famed breakfast burrito truck The Rooster has finally rolled into Austin. It is now serving at 1606 East Trailer Park on East 6th Street. It opened last Friday before Memorial Day weekend.
To celebrate its new digs, The Rooster has crafted a special “resident taco” for Austin. Dubbed the Ric Flair, the taco has eggs, tortilla chips, tater tots, cotija cheese, and avocado on a corn tortilla with salsa on the side.
Chef/owner Rouha Sadighi explains that the taco was created as an homage to Veracruz All Natural. “When we starting visiting Austin and checking out spots,” she said, “we fell in love with Veracruz and we literally would fly in and go straight there before doing anything else. It made us fall in love with the food culture of Austin, trailer parks, and amazing food, that we knew this was a perfect fit for us.”
The menu also includes sandwiches, burgers, avocado toast, and other brunch plates. The Rooster is open from 7 a.m. until 2 p.m. daily, and is located in the same food truck park as Austin Halal and Somethin’ Italian.
