My grandmother used to make kibbeh balls by hand and she used to teach me so many things in the kitchen. I never did learn how to form perfect kibbi balls though! Recently I discovered this kibbeh maker on Amazon and it really made kibbeh making so much easier! I'm really glad to have added this unique kitchen gadget to my repertoire!
Now, I read the kibbeh maker reviews and they kind of made me chuckle. Some people were dead set on making kibbeh balls by hand, and that somehow using a plastic kibbeh mold makes one less authentic. I beg to differ! I am Lebanese, and I thought that this kibbeh machine was genius... and quite reasonably priced!
Which is the best kibbeh machine for home?
There are 2 types of plastic kibbeh makers out there: there is one that makes 1 kibbeh ball at a time, and there is one that makes more than that. I have the kibbeh former that makes 9 kibbeh rolls at one time and I do highly recommend it.
Now in all honesty, I haven't tried the single mold, and there are some pretty impressive videos out there about how easy and quick it is to use. So maybe you do want to consider that one if you want something more compact. I totally get that!
I personally have the kibbeh maker machine that makes 9 at a time, and I am really impressed with its efficiency and ability to save time AND make perfect looking kibbeh balls!
How to use a kibbeh maker

First you NEED to use 3 pieces parchment paper or plastic wrap, otherwise it will be very difficult to make this apparatus work and you won't be able to get the formed kibbeh balls out of the mold. Place 1 piece of parchment paper over each side of the kibbeh mold with the hinges.
Take your kibbeh meat (full recipe in link) and fill all 18 wells with several tablespoons of meat (on top of the parchment paper).
Now take the 3rd piece of parchment paper and place it over one side of the kibbeh mold. After that take the plastic press and press down on the meat that is in the wells. The plastic press piece should fit directly down onto the mold. Carefully peel off the parchment paper from the top.
Do that process again on the other side. It's good if there is a little extra coming out along the edges, that will help it to seal into a tight ball.
Now you can take the prepared hashweh filling and put about 1 tablespoon in the center of half of them.
Carefully fold the kibbeh press together and push down on it so that all of the kibbeh rolls get sealed well.
Gently lift each meatball (they will look like little footballs) out and place them on a separate platter or baking sheet. Make sure that they are sealed well. Sometimes, they come loose at the seem and you just need to pinch it shut.
At this point it is best to freeze them or at least get them very cold in the fridge before you fry them.

Is it dishwasher safe?
Yes, this kitchen product is dishwasher safe. It is also quite easy to clean by hand.
Is it worth it?
If you make kibbeh often (or every once in a while), or stuff meatballs, I would say it is most definitely worth it! It saved time and made them look perfect. It took all of the frustration out of making perfect kibbi.
