That’s what owner Luke Shimp and his family wanted to create when they developed Red Rabbit.

With four successful Red Cow restaurants in Minneapolis and Saint Paul under their belt, Luke, Michael and Peter, wanted to take their winning Red Cow formula and apply it to Italian cuisine. Enter Red Rabbit. Launched in 2016, as a family business in the North Loop neighborhood of Minneapolis, the rustic-chic space has a contemporary, yet neighborhood-hangout-like feel. With a beautiful zinc-topped bar, exposed brick, charred cedar planks and dimly lit fixtures, the space has a cool and relaxed vibe. Settle into one of the cozy red booths lining the wall, gather ‘round a table or pull a seat up to the bar - it’s the perfect atmosphere to enjoy Red Rabbit’s craveable Italian menu.

‘Authentic Italian’ implies some staple dishes and Red Rabbit certainly delivers. A selection of perfectly prepared pizzas with a thin and crispy crust - like the Old World Margherita or the Spicy Salami - are always a hit with the entire family. The selection of traditional pastas are no different. From the Lasagna or Spaghetti & Meatballs to the Tortelloni and the Shrimp Garganelli - all are flavorful dishes that will leave you planning your next visit. The approachable menu also includes a sampling of delicious starters like the meatballs, burrata, the cheese & salami board and, of course, the oysters.
