ABSTRACT
Banana Blossom is one of the most important components of bananas; it is a
purple flower with a drop shape that hangs from the end of a banana bunch. Banana
Blossom has been shown to generally safe to eat; there are no reported negative effects,
but in most cases this part of the banana tree is discarded as waste or set aside as animal
feed, so the researchers came up with the idea of making a product with banana
blossom as its main ingredients. This study aims to measure the acceptability of banana
blossom patty in terms of appearance, aroma, taste, and texture. This study used a
quantitative approach to discover and describe banana blossom patty’s acceptability.
Surveys were utilized. Purposive Sampling was used to identify and select the
participants. The overall acceptability of the banana blossom patty with kalabasa has a
weighted mean of 7.28, and the malunggay sample has a weighted mean of 7.54, while
the chili powder sample has a weighted mean of 7.34, and all lies under the outstanding
descriptive analysis. It is similar to a regular patty in terms of taste, texture, appearance,
and aroma. Moreover, it has been found that banana blossom can be used as an
alternative to a regular patty. It has a high level of acceptability, indicating that demand
will increase. Makers will be able to manufacture more and sell the product on the
market both locally and globally.
