MANAGEMENT PLAN

3.1 Form of Ownership

Our coffee shop is a service business that primarily serves coffee of various types, as well as
other non-caffeinated beverages partnered with our bread and pastries, sandwiches and light meals.
This entrepreneurial venture is a partnership owned by Genlee Ian Robles and Prince Anjelo Pajarillo.

Genlee Ian Robles - Coffee Shop Manager

 Manage day-to-day operations of the cafe


 Hire and onboard new wait staff and baristas
 Train employees on drinks preparation and proper use of coffee equipment
 Coordinate with vendors and order supplies, as needed (like takeaway cups, coffee, milk and
other ingredients)
 Maintain updated records of daily, weekly and monthly revenues and expenses
 Add new menu items based on seasonality and customers’ preferences (for example vegan
coffee drinks)
 Advise staff on the best ways to resolve issues with clients and deliver excellent customer
service
 Ensure all cafe areas are clean and tidy
 Nurture friendly relationships with customers to increase loyalty and boost our reputation

Skills and Qualifications:

 Work experience as a Cafe Manager or Barista


 Hands-on experience with professional coffee machines
 Good math skills
 Availability to work within opening hours (including weekends and holidays)
 Excellent communication skills with the ability to manage and motivate a team
 Customer service attitude
 High school diploma
 Additional certification (e.g. in Business Administration or Hospitality) is a plus

Prince Anjelo Taway Pajarillo - Assistant Manager

 Research new suppliers and negotiate prices


 Calculate future needs in kitchenware and equipment and place orders, as needed
 Manage and store vendors’ contracts and invoices
 Coordinate communication between front of the house and back of the house staff
 Prepare shift schedules
 Process payroll for all coffee shop staff
 Supervise kitchen and wait staff and provide assistance, as needed
 Keep detailed records of daily, weekly and monthly costs and revenues
 Arrange for new employees’ proper onboarding (scheduling trainings and ordering uniforms)
 Monitor compliance with safety and hygiene regulations
 Gather guests’ feedback and recommend improvements to our menus

Skills and Qualifications:

 Work experience as a Restaurant or café Assistant Manager or similar role in the hospitality
industry
 Familiarity with restaurant management software, like OpenTable and PeachWorks
 Good math and reporting skills
 Customer service attitude
 Communication and team management abilities
 Availability to work within opening hours (e.g. evenings, holidays, weekends)
 High school diploma; additional certification in hospitality is a plus

Ian Arcilla - Chef

 Set up workstations with all needed ingredients and cooking equipment


 Prepare ingredients to use in cooking and baking
 Cook food in various utensils
 Check food while cooking/baking
 Ensure great presentation by dressing dishes before they are served
 Keep a sanitized and orderly environment in the kitchen
 Ensure all food and other items are stored properly
 Check quality of ingredients
 Monitor stock and place orders when there are shortages

Skills and Qualifications:

 Proven experience as cook


 Experience in using cutting tools, cookware and bakeware
 Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.)
 Ability to follow all sanitation procedures
 Ability to work in a team
 Very good communication skills
 Excellent physical condition and stamina
 High school diploma or equivalent; Diploma from a culinary school will be an advantage

Roel Calderon Jones - Barista

 Greet customers as they enter


 Give customers drink menus and answer their questions regarding ingredients
 Take orders while paying attention to details (e.g. preferences of coffee blend, dairy and sugar
ratios)
 Prepare beverages following recipes
 Serve beverages and prepared food, like cookies, pastries and muffins
 Receive and process payments (cash and credit cards)
 Keep the bar area clean
 Maintain stock of clean mugs and plates
 Check if brewing equipment operates properly and report any maintenance needs
 Comply with health and safety regulations
 Communicate customer feedback to managers and recommend new menu items

Skills and Qualifications:

 Previous work experience as a Barista or Waiter/Waitress


 Hands-on experience with brewing equipment
 Knowledge of sanitation regulations

 Greet and escort customers to their tables


 Present menu and provide detailed information when asked (e.g. about portions, ingredients or

 Prepare tables by setting up linens, silverware and glasses
 Inform customers about the day’s specials
 Offer menu recommendations upon request
 Up-sell additional products when appropriate
 Take accurate food and drinks orders, using a POS ordering software,order slips or by
memorization
 Check customers’ IDs to ensure they meet minimum age requirements for consumption of
alcoholic beverages
 PCommunicate order details to the Kitchen Staff
 Serve food and drink orders
 Check dishes and kitchenware for cleanliness and presentation and report any problems
 Arrange table settings and maintain a tidy dining area
 Deliver checks and collect bill payments
 Carry dirty plates, glasses and silverware to kitchen for cleaning
 Meet with restaurant staff to review daily specials, changes on the menu and service
specifications for reservations (e.g. parties)
 Follow all relevant health department regulations

 Proven work experience as a Waiter or Waitress

Toast POS)

James Solasco - Dishwasher

 Collect used kitchenware from dining and kitchen areas


 Load and unload dishwashing machines
 Wash specific items by hand
 Store clean dishes, glasses and equipment appropriately
 Set up workstations before meal prep begins
 Ensure there are always enough clean dishes, glasses and utensils, especially during peak hours
 Maintain cleaning supplies stock (e.g. detergents) and place orders when necessary
 Check washing machines’ operation and promptly report any technical/performance issues
 Remove garbage regularly
 Sanitize the kitchen area, including the floor
