Chapter 1

INTRODUCTION

BACKGROUND OF THE STUDY

As time pass by, various consequences have occurred along the focus of

the globe to the emulsification of commercial beverages that is becoming

more synthetic than natural. This somehow causes various concerns in terms

of commercial and biological platform to people. Meanwhile, coloured juices

come in different natural sources but is somehow grape juice which is known

to be natural purple colour with its natural flavour is only available to

countries in the world which causes unavailability to tropical area where this

fruit is not available. Also, occurring illnesses such as urinary track infection

is becoming worst due to the massive engagement of drinking common

commercial juice. Many suggest that Clitoria Ternetea an Asian Pigeon Purple

juice but at the same time a human healthy and safe for biological

improvements. Along the tropical countries, herbal beverages are becoming

more in trend specially the Clitoria Ternetea which is known having so much

benefits to the human health as main enhancer and many more. ( Al-Snafi;

,2016).
Most of their commercial juices sold in the market may cost much prices as

a result of the inflation rate in the world platform yet it turns out to be

synthetic and chemically added when it is distributed to countries when the

national fruit flavour is not available like grape which originates at Brazil and

European countries and not in tropical areas like Philippines. ( Granato et.al,

2015).

Meanwhile, in the Philippines, there are various factors that affects the

unavailability of grape juice. This includes the price, origin and market. Yet

this country is a tropical place where Clitoria Ternetea may grow on a native

by a product and is cultured by the people which is merely attainable and

economically helpful when making it as a juice but still needs testing.

In Mabini, Clitoria Ternate is known for a great drink with great attributes

and good organic taste. Also,there are many blue ternate in Mabini.

The researchers will attempt to conduct the comparative-experimental

research that will measure the level of Satisfaction of Pindasan Grade 12

Students between the Clitoria Ternetea (Blue Ternate) juice and the

Commercial Grape juice.


The purpose of the quantitative study was to uplift the organic things

around us, to convince the respondent and to compare the level of

Satisfactory between organic and commercial which main ingredient can be

found in the scope. In addition, this study will gain positive engagement of

organic things that will soar high the state of a person and choose the best,

affordable and healthier.


STATEMENT OF THE PROBLEM

The research study was followed with the following research questions:

1.) What is the level of satisfaction toward commercial grape juice in

terms of :

● Taste

● Texture

● Color

2.) What is the level of satisfaction toward Clitoria Ternetea ( blue ternate )

juice in terms of :

● Taste

● Texture

● Color

3.) Is there a significant different between commercial and natural calamansi

juice?
Hypothesis:

The null hypothesis below are tested at 0.05 level of significance.

1.) There is a null significant relationship between the level of

commercial grape juice and a level of Clitoria Ternatea juice of Grade

12 Senior High School students in Pindasan National High School.

2.) There is no domain that significally influences the commercial and

Clitoria Ternatea juice of Pindasan National High School.


Theoritical Framework

This study was from Hindawi (2019) who studied the Clitoria Ternetea

flower extract and its application to beverages. The researchers theory was all

about the content of Clitoria Ternatea and its good effect in incorporating it to

beverages.

Aside from containing antioxidant, Clitotia Ternetea, Clarified White Clitoria

Ternatea have only a very little light yellow coloring within the core. In

addition, thus white flowers have an extra medicinal effect than the blue

flowers. Clitoria Ternetea shows the effects of antidepressant and stress

reliever. Also it aids to in curing taken orally. ( Georjo Johan 2010 ).

In addition, Clitoria Ternatea extract is a great source of antioxidants and can

improve and develop the hardness, adhesiveness, gumminess, and chewiness

and decreasing cohesiveness of food like sponge cake. (Pasukamonset et al.,

2018)
Conceptual Framework

In the Figure below, the Natural Blue Ternatea Juice (Clitoria Ternatea) and

Commercial Grape Juice is the Independent Variable, while the satisfaction

level of Grade 12 Pindasan Senior High School students is the Dependent

Variable.Two types of Juices will cause the changes and the satisfaction level

of Grade 12 students will be the one to bear the changes, in terms of taste,

color & aroma caused by the Independent Variable.

Significance of the Study

Organic sources of fruit juices are important for the welfare of consumers

without being engage with chemical processing. This study aims to help

economically and biologically beneficial for the suggestion of other ways and

ideas innovation for future innovation of researchers.

This study will be a guide for the people who needs to have good medicinal

affects organically ad the people who needs to have affordable and organic

healthy drinks instead of the expensive commercial drinks.

In addition this study will also nurture the nature and give appreciation on

it. The outcome of the research will benefit the following:

Students: This study will be their guide in choosing the best drinks to take.

This study will also spread the importance of having organic drinks instead of

expensive drinks. In addition, this study will also help the students to be

more aware between synthetic and natural.

Parents: This study will build the sense of choosing what is the best and right

drinks to take. By this study, parents will be more aware of the big difference

of organic into commercial.

Future Researchers: This study will serve as a great perspective for knowing

the difference between organic and commercial. By this study, future


researcher can be more aware and gain more exploration into the organic

things in the globalized world.


Scope and Limitation

The main content of this study was only to seek knowledge about the

differences between Clitoria Ternetea and Commercial Grape juice. This

study was only limited to the chosen student of Pindasan National High

School particularly the Grade 12 Section Fortitude, Transcendence, Prudence

and Empowerment Senior High School Students who will be the chosen

respondents to the study, in Davao De Oro of School Year 2019-2020. The time

and duration of the study was from


Definition of Terms

Clitoria Ternetea - commonly known as Asian

pigeonwings, bluebellvine, blue pea, butterfly pea, cordofan

pea and Darwin pea,[is a plant species belonging to the family Fabacea.

Natural – never undergo in chemical processing

Commercial – grape powdered juice process and mixed with preservatives

and undergo chemical process.


CHAPTER 2

Review of Related Literature

Clitoria Ternatea as Natural Juice

In as early as the 1950s, studies on C. ternatea sought to elucidate its

pharmacological activities, phytochemical composition and active

constituents (Grindley et al., 1954; Piala et al., 1962; Kulshreshtha and Khare,

1967; Morita et al., 1976). Clitoria ternatea, commonly known as butterfly pea,

is a perennial herbaceous plant from the Fabaceae family. It has recently

attracted a lot of interest as it has potential applications both in modern

medicine and agriculture, and as a source of natural food colorants and

antioxidants (Front plan sci., 2019).

Butterfly Pea plant and tea made from it were used to relieve general p

ain, decrease inflammation, help with specific eye problems such as conjuncti

vitis, battle certain types of cancer, promote brain health, and "increase vitalit

y”(Greenblender, 2020).

For centuries Clitoria Ternatea has been used as a memory enhancer, b

rain booster, anti-stress and calming agent (Majestic Herbs, 2019).

Additional studies have shown the tea's ability to help reduce intern-

al inflammation (Greenblender, 2020).

According to (Ad Taranalli,2000), Clitoria Ternetea extracts has been

tested in rats that is really a brain tonic that enhances brain. In addition, the

root parts were found to be more effective.


In addition, according to Ravindra B Malabadi;2012), Clitoria

Ternetea’s whole plant extract is a great antibacterial through the silver

nanoparticles synthesized from plant extract and has many pharmaceutical

applications for the control of deadly pathogens.

Commercial Grape Juice

Grape juice is rich in Vitamins, amino acids, proteins, minerals and

various organic acids (TICO, 2020). The potential health benefits associated

with grape juice have attracted attention of children, elders and athletes,

resulting in 570% increase in grape juice commercialization worldwide in the

past 10 years (IBRAVIN, 2015; Bragantia and Scielo, 2018).

Also, Commercial Grape Juices inhibit the in Vitro Oxidation of Human

Low-Density Lipoproteins that delivers cholesterol to cells in the body.The

function of LDL is to deliver cholesterol to cells, where it is used in

membranes, or for the synthesis of steroid hormones (blue pathway). Low

Density Lipoprotein is considered to be undesirable and is often called "bad"

cholesterol because it deposits excess cholesterol in blood vessel walls and

contributes to hardening of the arteries and heart disease. (Edwin N. Frankel

et al., 1998)

Clitoria Ternatea Juice and Commercial Juices Quality

Juice is the liquid from a fruit or vegetable. Fruit juices are packed with

vitamins, minerals and phytochemicals. Researchers have found that these


compounds in fruit and fruit juice help to maintain good health by preventing

and fighting disease (Margaret Wandrey, RD, LD, 2007).

Juices are rich in anti-inflammatory compounds that can boost the

immune system and help a person feel more energetic. Juices may help

improve digestion through the addition of healthy enzymes that make the gut

more productive to function (Gerhard Whitworth, R.N., 2018).

Compared with unpasteurized juices, refined fruit juices are

considered safe and nutritious (low pH) since untreated juice can carry any

pathogen, that is, Salmonella , and Escherichia coli. The major concern

associated with juice drinks is yeast fermentation, and uncarbonated (still)

juice drinks are grown mold.( Ashurst and Hargitt, 2009)

Most of the consistency of the juice depends on the quality of its raw

material or ingredient, i.e. fruits, water, sweeteners, additives, flavors,

preservatives, etc. and more emphasis was on the raw material or ingredients.

High quality raw fruits, which are free from any injuries or contamination, are

required for the production of premium quality food. (Ashurst et al., 2017).
Chapter 3

METHODOLOGY

This chapter presents the research design, research locale that was used by the

researchers in conducting this study.

Research Design

This research used comparative experimental design involving two

variables through the design of an experiment. Comparative experiments are

usually designed to test the relationship between independent and dependent

variable. Also it can be designed to collect data under different conditions.

This requires a testable hypothesis, at least one independent (manipulated)

variable, one dependent (responding) variables and control group (ASE-

SCIENCE, 2015).

Quantitative data is numerical data such as statistics percentages, etc. The

analysis in the research data will be a guide for an unbiased result that can

give aid and can be generalize to larger population. This study used

quantitative research, which composed of investigation via statistical,

mathematical or computational techniques. The goal of quantitative research

is to enhance mathematical model that involves theories and hypothesis. The

process is quantitative research because it give great connection in terms of

mathematical techniques, via statistical data that express a quantitative

relationship and connection


Research Locale

The actual testing between Clitoria Ternatea (Blue Ternate) and

Commercial Grape Juice was conducted at the Pindasan, Mabini, Davao De

Oro.

Population and Sample


The researchers respondents are Grade 11 students in Pindasan National

High School with the used of complete enumeration technique for the

respondents. The researchers conduct this study to the respondents for it

serves as their guide and the group may learn a lot and be guided.

Research Instrument

A questionnaire was used in gathering data. The questionnaire consist

different set of items with satisfaction level between Clitoria Ternatea and

Commercial Grape Juice in terms of taste,texture and color.

Validation of the Research Instrument

Permission to conduct the study will be completed by the School Head of

Pindasan National High School.


Data Gathering Method

The researchers personally approach the respondents and explain the

study and give the research instrument . The respondents were given a 15

minutes to accomplish the forms properly and generate time management.

The researchers went to the section on collecting the accomplished

questionnaires.

After the questionnaires have been accomplished and analyze, the

results were be tabulated properly without biases. These data became the

bases of analysis and interpretation.

The researchers asked proper permission to the principal 1 of Pindasan

National High School through the approval letter. After the approval of the

principal, the researchers will send parent consent to the respondents for most

of them are minors. After the parents will agree by the used of parent consent,

the researchers will now conduct this study.

The data gathering duration was assumed to be done for one to two days.

Below were the process of making Clitoria Ternatea Juice and the

materials, ingredients and procedure on how to make the commercial Grape

Juice.
Making the Clitoria Ternatea Juice

INGREDIENTS

 1 Cup Butterfly Pea Flowers (Dry or Fresh)

 1 Liter Drinking Water 2 pints

 1 Tablespoon Honey

 2 Tablespoon Brown Sugar

 2 Limes

 1 Can Sprite

 1 Bottle Soda Water

INSTRUCTIONS

1. Boil the water in a saucepan.

2. If using fresh flowers then while waiting for the water to boil, prepare

the Butterfly Pea Flowers by cutting the green bottoms off. If using

dried flowers you can use as they come.

3. When the water has boiled turn off the gas and tip in the flowers and

put the lid on the saucepan. Allow to sit for 5 minutes without further

heating (if you carry on boiling water a bitter taste will develop).

4. When your 5 minutes is up strain the tea concentrate into a jug.

5. Whilst still warm add the honey and brown sugar and stir to dissolve

(you can adjust sweetness by adding more or less to your taste).

Commercial Grape Juice Procedure


Ingredients:

-Commercial Grape Juice

-2 liters of Drinking Water

Procedure:

1. Prepare the Commercial Grape Juice and the pitcher with water.

2. Put the Commercial Grape Juice in the pitcher.

3. Stir.

Ethical Consideration

It is imperative that ethical issues are addressed while the assessment p

lan is being formulated. In assessment the ethical considerations include:

Informed Consent

Informed consent means that the individual involved in the assessment is

fully informed of the assessment being carried out Participants must be made

aware of the project's intent, who or what organization funds the project, how

the results will be used, if there are any adverse effects of their involvement

and who will have access to the findings. The main purpose of informed

consent is for the participant to be able to make an informed decision as to

whether or not they will participate in the assessment. In case the participant

becomes distressed in any way during their participation additional

information should also be provided.

Voluntary Participation

Voluntary involvement means people are free from coercion to participate in

the evaluation. Participants are free to withdraw their participation at any

time without adversely affecting their involvement in future programs or the

current system and relationships with any of the researchers or research

institutes involved. It may be hard to persuade high-risk youth to participate

in the program, and it is therefore difficult for participants to choose not to

continue the program.Participants are entitled to leave such a program at any

time so no pressure should be placed on those who choose not to continue.

Explanations are not necessary, either.


Do no Harm
Harm can be both physical and/or psychological, and can therefore be in the f
orm of: stress, pain, anxiety, diminishing self-
esteem or a privacy invasion. It is imperative that the assessment process does
not harm participants in any way (unintended or otherwise)

Confidentiality

Means that no one but the program coordinator makes any identifying inform

ation available or accessible to them. Confidentiality often guarantees that suc

h identifying information is removed from all records or documents released.

Since there are often small numbers of peerbased programs, it is very importa

nt to consider how reports are worded to ensure that there is no potential for i

ndividuals to be recognized even if names are not being used.

Anonymity

is a more strict form of privacy than confidentiality, because the research tea

m remains unaware of the participant's identity. This is more difficult to achie

ve than confidentiality, since the program coordinator usually knows the parti

cipants in social research

Only assess relevant components- Only evaluate those components which

are relevant for the program / initiative being carried out. High-risk

populations are sometimes used as guinea pigs or as test subjects to ask all

kinds of questions in assessments that are of interest to the program /

initiative groups but are not important to the program or to the group

involved in the project..


It is important to keep evaluations as simple as possible and to stay focused o

n the purpose of the evaluation and what the collected data will be used for.
Statistical Tool

These are the statistical tool that will treat the data gathered in the

conduct of the study.

Mean refers to the mean or average used to derive the central trend of the dat

a at issue. It is calculated by combining all of a population's data points and th

en dividing the sum by the number of points. The number that results is kno

wn as the mean or average.

Likert Scale. The most broadly used method for scaling responses in survey

studies. Survey questions that ask you to indicate your level of agreement,

from strongly agree to strongly disagree.

Analysis of Variance. A collection of statistical models and their associated

estimation procedures (such as the "variation" among and between groups)

used to analyze the differences among group means in a sample.
