In one of those happy coincidences that tell us the universe loves us, we got word of two upcoming TV appearances by two fine representatives of the Chicago food scene. The first is Chef Andrew Zimmerman of Sepia, well known in these pages, who on the heels of his first-ever Beard nomination is doing the cheffy-media rounds in New York City. Tomorrow morning he’ll be a guest on Martha Stewart Radio’s “Morning Living” show, with hosts Betsy Karetnick and Brian Kelsey, talking summer barbecue tips and giving out a recipe with Indian flavors. On Friday he’ll be doing a chef demo in the third hour of The Today Show, making pan-roasted cod with sweet corn and clam chowder.
No viewing party is scheduled for these early morning appearances, but there will be a viewing party tonight at The Fifty/50 as its sandwich The Four-Courser is featured on Adam Richman’s “Best Sandwich in America” program on the Travel Channel at 8 pm. The sandwich (normally $10) is just $4 today, and here’s the description from the restaurant which we don’t believe we could improve upon:
The Four-Courser is made by taking a whole Duroc pork shoulder sprinkled with Fifty/50’s BBQ rub, smoking it in-house over apple wood for 13 hours, hand-pulling the pork, and then tossing it in a gouda béchamel. It’s then topped with battered and fried jalapenos, BBQ sweet potato chips, a mac ‘n’ cheese waffle, and smoky sweet BBQ sauce. The Four-Courser is served on a warm pretzel bun and with a choice of regular, waffle, or sweet potato fries on the side.
