Original recipe (1X) yields 6 servings 6 Yukon Gold potatoes, peeled and quartered 5 slices bacon 1 tablespoon vegetable oil 6 medium mushrooms, sliced 1 medium onion, sliced 2 tablespoons butter 2 tablespoons ranch dressing Directions Add potatoes to a large pot of water and bring to a boil. Cook until the potatoes are soft, about 20 minutes. Meanwhile, place the bacon slices in a large skillet over medium heat, and cook until crisp. Remove to paper towels.
