Original recipe (1X) yields 12 servings Nutmeg Cake: 3 eggs, room temperature ½ cup butter, softened 1 ½ cups white sugar 1 cup buttermilk 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 2 teaspoons ground nutmeg ¼ teaspoon salt Caramel Icing: ½ cup packed brown sugar 3 tablespoons cream ¼ cup butter 1 ½ cups confectioners' sugar Directions Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 (9-inch) round cake pans. Make nutmeg cake: Beat butter and white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add eggs, one at a time, until well-blended. Stir in vanilla. Sift together flour, baking powder, baking soda, nutmeg, and salt.
