Original recipe (1X) yields 12 servings 1 (16 ounce) package farfalle (bow tie) pasta 1 tablespoon olive oil ½ red onion, chopped 4 cloves garlic, minced 1 zucchini, chopped 1 yellow squash, chopped ½ cup sliced fresh mushrooms ½ red bell pepper, cut into strips 5 roma (plum) tomatoes, chopped ¼ cup fresh basil leaves 1 teaspoon dried oregano 1 teaspoon salt 1 teaspoon pepper ¼ cup olive oil 1 cup finely grated Parmesan cheese Directions Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Heat 1 tablespoon olive oil in a large skillet over medium heat.
