Ingredients

Original recipe (1X) yields 3 servings

  • 4 large eggs

  • 4 ounces cooked, shredded chicken breast

  • ½ cup chopped onion, or more to taste

  • ½ cup chopped broccoli

  • 1 tablespoon coconut aminos

  • ½ teaspoon garlic powder

  • ½ teaspoon sea salt

  • ¼ teaspoon ground black pepper

  • 2 tablespoons avocado oil, divided

  • 1 stalk green onion, thinly sliced (green part only)

Directions

  1. Mix together eggs, cooked chicken, onion, broccoli, coconut aminos, garlic powder, salt, and pepper in a bowl.

  2. Heat 1 tablespoon oil in a saute pan over medium-low heat. Add 1/3 of the egg mixture and cook for 2 to 3 minutes. Flip and cook the other side for 2 to 3 minutes. Repeat twice more to cook remaining 2 servings, adding remaining oil as needed.

  3. Garnish servings with green onions.
