Ingredients

Original recipe (1X) yields 10 servings

  • 2 pounds ground beef

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 1 onion, chopped

  • 1 tablespoon chopped garlic

  • 2 (10 ounce) cans diced tomatoes and green chiles (such as RO*TEL®)

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can whole kernel corn, drained

  • 2 ½ cups chicken broth

  • 2 cups uncooked jasmine rice

  • 2 (1.41 ounce) packages sazon seasoning

  • 1 (1 ounce) packet taco seasoning

Directions

  1. Place beef, bell peppers, and onion into a Dutch oven over medium heat. Cook and stir until beef is browned and crumbly, 5 to 7 minutes. Add garlic and cook for 1 minute. Add diced tomatoes with chiles, black beans, corn, chicken broth, rice, sazon, and taco seasoning. Mix into beef.

  2. Cover and cook over medium-low heat until rice is cooked through and tender, 20 to 25 minutes.
