Ingredients

Original recipe (1X) yields 12 servings

Crumb Layer:

  • 1 ⅓ cups all-purpose flour

  • ½ teaspoon baking soda

  • 1 pinch salt

  • 1 ⅓ cups quick cooking oats

  • ½ cup white sugar

  • ½ cup lightly packed light brown sugar

  • ¾ cup melted unsalted butter, plus more for greasing

  • 2 teaspoons pure vanilla extract

Filling:

  • 1 ⅔ cups strawberries, hulled and diced

  • 1 ½ cups fresh rhubarb, cut into 1/4 inch pieces

  • 1 tablespoon freshly squeezed lemon juice

  • cup white sugar

  • 1 tablespoon cornstarch

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish with butter.

  2. Make crumb: Combine flour, baking soda, and salt in a large bowl. Mix in oats, white sugar, and brown sugar until well combined, using the back of a spoon to break up any brown sugar clumps. Add melted butter and vanilla; stir until mixture is evenly moistened.

  3. Press 2 cups crumb mixture into the prepared baking dish, pressing down lightly. Set remaining mixture aside.

  4. Make filling: Combine strawberries and rhubarb in the same large bowl. Drizzle with lemon juice and toss to combine. Mix together sugar and cornstarch in a small bowl until combined. Sprinkle over strawberry-rhubarb mixture and mix well.

  5. Pour filling on top of crumb layer in the baking dish. Crumble reserved crumb mixture over filling, spreading evenly.

  6. Bake in the preheated oven until top is browned and filling is bubbly, about 45 minutes. Remove and cool before cutting into bars.
