Original recipe (1X) yields 12 servings 4 ripe bananas ⅓ cup applesauce 1 large egg ¼ cup white sugar 1 teaspoon vanilla extract 1 cup einkorn flour 1 cup rolled oats ½ cup dried blueberries ½ cup shredded coconut (Optional) 2 teaspoons ground cinnamon 2 teaspoons baking powder 1 teaspoon salt ½ teaspoon baking soda Directions Preheat the oven to 350 degrees F (175 degrees C).
