A favorite tapas dish, these Spanish shrimp are infused with the flavors of garlic, olive oil, and chile peppers. Easy and authentic! Use as many chile peppers as you can take.

Ingredients

  • ½ cup olive oil, or as needed

  • 1 head garlic, cloves peeled and coarsely chopped

  • 1 dried red chile pepper, seeded and chopped, or to taste

  • 1 pound uncooked medium shrimp, peeled and deveined

  • salt to taste

  • 2 tablespoons chopped fresh parsley, or to taste

Directions

  1. Heat 1/4 inch olive oil in a skillet over medium heat. Add garlic and chile pepper and saute until fragrant, about 1 minute. Remove garlic and chile peppers with a slotted spoon and set aside. Add shrimp to the hot oil. Cook and stir until opaque in color, about 3 minutes.

  2. Return garlic and chile peppers to the skillet. Season with salt and cook for 2 more minutes. Sprinkle with fresh parsley and serve immediately.
