Original recipe (1X) yields 4 servings 1 tablespoon vegetable oil 1 tablespoon white sugar 2 pounds bone-in, skin-on chicken thighs, or more to taste 1 tablespoon salt 1 teaspoon ground black pepper 1 large onion, chopped ½ (14.5 ounce) can petite diced tomatoes, or more to taste 1 cup chicken broth, or more as needed Directions Heat oil in a deep skillet over low heat. Sprinkle sugar over the bottom. Season chicken thighs with salt and pepper; cook in batches until browned, about 5 minutes per side. Transfer browned chicken to a plate. Remove skin.
