Original recipe (1X) yields 6 servings 3 cold baked potatoes ½ cup butter ½ cup chopped bell pepper ½ cup chopped onion ½ cup diced celery ½ cup milk 1 pound imitation crabmeat, flaked and chopped ½ cup shredded Cheddar cheese ¼ cup chopped fresh dill 1 pinch salt to taste 2 eggs, beaten 1 tablespoon olive oil Directions Split and mash the potatoes in a mixing bowl; set aside. The potato skins may be left on if desired. Melt the butter in a saucepan over medium-high heat; cook and stir the bell pepper, onion, and celery in the melted butter until they begin to soften, 5 to 7 minutes.
