Original recipe (1X) yields 8 servings 1 cup water 1 cup diced red bell pepper ½ cup thawed frozen chopped spinach 1 (8 ounce) package cream cheese 2 tablespoons milk ½ cup grated Parmesan cheese ½ teaspoon crushed red pepper flakes ¼ teaspoon salt 1 pinch freshly ground black pepper 1 tablespoon finely diced red bell pepper Directions Bring the cup of water to a boil in a small saucepan over high heat and add the 1 cup of diced red pepper and the chopped spinach. Bring the water back to a boil, turn the heat down to medium and simmer until the pepper is very soft, about 10 minutes.
