Original recipe (1X) yields 24 servings 4 cups quinoa 4 cups water ¼ cup red wine vinegar 4 teaspoons Dijon mustard 2 teaspoons salt 1 teaspoon ground black pepper 1 teaspoon lemon juice 1 cup canola oil 2 medium cucumbers, peeled and chopped 2 medium tomatoes, chopped 1 (15 ounce) can black olives, chopped 1 medium green bell pepper, chopped ½ medium red onion, chopped Directions Bring quinoa and water to a boil in a saucepan. Reduce the heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Transfer cooked quinoa to a large bowl and refrigerate until cold, about 1 hour. Blend vinegar, Dijon, salt, pepper, and lemon juice in a blender. Slowly pour in oil, with the blender running, until dressing is smooth and thick. Remove quinoa from the refrigerator.
