Ingredients

Original recipe (1X) yields 48 servings

  • ½ cup shortening

  • 1 ½ cups white sugar

  • 1 egg

  • 1 cup canned pumpkin

  • 1 teaspoon vanilla extract

  • 2 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon ground nutmeg

  • 1 teaspoon ground cinnamon

  • ½ cup chopped walnuts (Optional)

  • 1 cup semisweet chocolate chips

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.

  2. Cream shortening and sugar together in a large bowl until light and fluffy. Beat in egg, then stir in the pumpkin and vanilla. Combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon; gradually mix into the creamed mixture. Stir in walnuts and chocolate chips. Drop dough by teaspoonfuls onto the prepared cookie sheets.

  3. Bake in the preheated oven until light brown on top, about 15 minutes. Cool on wire racks.
