I had to substitute vanilla extract for the vanilla sugar since I am out. Also, had to substitute 1/8 tsp cinnamon and 1/8 tsp nutmeg since I had no cardamom. And alas, no buttermilk so did the 1 oz vinegar to 7 oz of milk.Followed all the directions and would say these are some kicking waffles. I am definitely going to get the proper ingredients and go at this again because if they are good with the substitutions then they should be even better with the right stuff. Thanks much. Since I wasn't sure I'd like it, I cut all the ingredients into thirds, used walnuts since I didn't have pine nuts and garlic scapes since I didn't have garlic cloves. Threw everything in my Ninja, and then added a little more olive oil to make the consistency I like. I divided it into tablespoon servings in a silicon ice tray and froze. Since pesto, in my opinion, goes a long way with just a little, I'll have 15 servings from one third of the recipe! Thanks for the recipe. In the last 2y I have NOT added water! If you do, expect it to take a few days to reduce down. I find it delicious and relatively easy, as well as forgiving if one wanted to add their own ingredients. For the first time I put it through the vita-mix and am very happy with the creamy texture…it also was easier to reduce. I’ve also cut the lemon juice to 1 tablespoon. I wish the recipe mentioned what altitude they’re at so followers can adjust the processing time if necessary. However I’ve never had issues processing 45m. There is a problem with the recipe.It will adjust for the ingredients but when it comes to the lemon and salt as an add to each jar, that part does not adjust like the ingredient list does.So I put 1tsp salt and 1tbs of lemon juice.I wish there was just a citric acid amt add.Lemons are so expensive even in the liquid. Always got compliments. Tried this recipe this morning and it was next level batter errr better. I don't think that buttermilk is a thing there and was more than likely a Norwegian version of Fil Mjolk. Which is available in the states now under the brand name Siggis. The cardamom was a great secret ingredient. Thanks for sharing. Instead, pour the confectioners' sugar into a pie pan, and then drop teaspoon-sized pieces of dough into the sugar. (You can scoop and drop several pieces of dough at a time into the sugar.) Pick up each piece of dough and roll it around in the confectioners' sugar as you gently shape it into a ball. Your fingers will be "floured" with the confectioners' sugar, which keeps the dough from clinging and makes it MUCH easier than trying to form balls first with the sticky dough! These muffins are surprisingly good, at least to a non-Paleo person. Definitely include the dates, for flavor, sweetness, and texture.
